1 front-house manager, 1 back-house manager.
Front house handles customers, customer orders, equipment, repairs. Back house handles making the food, food orders, and inventory.
Both work together on product offerings and price points.
This is such fucking BASIC shit in the restaurant industry I can't believe I'm even having to spell it out multiple times. And if you can't generate enough revenue to support TWO full time, reasonably paid people at a restaurant, it's not a viable business model. You don't have to hire a fucking 200k a year executive. Jesus Christ you people are obtuse.

hiring someone to run shit is like entrepreneurship 101. it's incredibly common that the type of person that does well as an entrepreneur isn't always the best person to run things or sometimes even to grow things. it's incredible common for people to hire someone to help manage the business side of things, in fact some of the best entrepreneur will tell you that their success comes from their ability to let go and some things to people better than them. and even if you don't do that you have to delegate or you are going to get bogged down in little things and miss the big decisions that you need to be making. 2/7/2011 7:32:48 PM |

You have $9000 worth of bills to pay every month without labor. ONE employee at minimum wage for each hour I'm open costs $2,392.50. I'd have to bring in $7000 extra PER MONTH to break even on labor.

#1, if you didn't have the liquid capital to open the business and pay operating expenses for AT LEAST two years, you should never have started. Never. 24 months of capital is absolutely bare minimum to have enough cash flow to sustain a company.
#2, how many minimum wage employees do/did you have? If you worked the kitchen, I'd be willing to bet you can do the job of 2-3 minimum wage grunts. Which you can redirect into hiring ONE person to handle the front.
So. Either you didn't have the investment capital to run the business in the first place, you don't actually make enough money to support the minimum staff to keep the business running, or you're bullshitting something to avoid admitting that maybe there's another way to do things besides your twisted way of thinking.2/7/2011 8:42:22 PM |
