^does country ham keep w/o refrigeration? i don't ever remember my grandma keeping it in the fridge. i a tree knocked all the power lines down and i was w/o power for 12ish hours the other day. i tossed out everything in the fridge but kept the country ham, its never been opened.

i think i've finally figured out the sauce used with the hong kong chilean sea bass at sullivans.
so that, except on a swordfish steak, dressed with sauce, tlightly sauteed zucchini, and a small microgreens salad on top of the fish.
i havent been posting in here, but have been cooking a lot.
in a bet where eating out is forbidden, and processed foods are highly discouraged. a stem off of that thread. so, cooking every single meal.
abt to end the second month, but my grocery bills have gone up up up.. but the dining out bills are zero so i still save money, even spending like $25+/day. i like to eat good things.

i have to post what i had last night.
amuse-bouche: jersey watermelon with basil chiffonade, 25 year old aged balsamic vinegar drizzle. brut champagne. course 1: prosciutto wrapped, gorgonzola and walnut stuffed figs, aged balsamic and olive oil vinaigrette drizzle, dusted with white pepper. semi-sweet riesling. course 2: lobster and crab cakes (in some style i dont remem...ber that replaces the breading with shrimp), fava bean puree, roasted red pepper sauce, herb infused olive oil, sprinkled with smoked paprika. mondavi chardonnay. course 3: filet mignon (rare) napoleon with brioche crostini, foie gras medallion, fig preserves. port braised shiitake mushrooms with some sort of herbed light red sauce. with a bold cabernet and a white dessert wine. cab for the filet, dessert wine to play with the foie gras. course 4: dessert/cheese course.. lightly almondy homemade vanilla ice cream, candied almond dust, bananas foster. cheese plate with brioche crostini, cranberry walnut bread, fig preserves, local honey, chevres goat cheese, and montrachet ...goat cheese.
then lots of bear republic ipas and pale ales.
took the gf out for a nice dinner. i dont think she'd ever been to a dinner like that, and i might have found one of my new favorite places in my neighborhood.

I was simmering (at medium heat), went to lift up the lid to check on the fish, and the lid exploded in my hand. Glass went everywhere and all in the catfish.

Some snotty ass girl on the phone pretty much made it seem like it was my fault... and that "unfortunately glass breaks, and a scratch or crack could've caused it." I HAD NEVER USED THEM BEFORE... and the heat was on MEDIUM. The top was on for like 5 minutes! Not to mention, I looked at it before putting it on (because I was excited for new pots/pans) and there were no marks to be seen. She said that it isn't covered under warranty but they will send me a lid "as a one-time courtesy" and that she's never heard of this happening the first time... Even though I found reports of this happening to other people after only a few times of use and on the first time... Stupid betch.
Anyway, they don't have stainless steel lids or anything other than glass so our family friend suggested I go return the set and get a new type.. I feel so bad 8/12/2010 4:51:51 PM |

I know, and that girl was extremely monotone... had an attitude the entire time. I feel terrible because Tony (our family friend who gave them to us) feels horrible about it. He has had a glass top do that to him many years ago and remembered how scary it was.
My mom also found reports about how the copper bottom has warped on quite a bit of others' pans/pots with this set... One man went to lift the pot and the whole bottom fell out In the words of one consumer, Emeril can cook but he can't make cookware.
