I thought about using

charge = (Eo * Area) / distance between the plates

but i'm getting the wrong answer

alright here is how you do it
Capacitance=Eo*A/S
then use deltav=EL
and then Q= EoA/s
bingo there is your answer

for number two (E when charging a capacitor) why is the curve exponential?
