i hear you can graduate and then take up to 7 hours in the summer to finish up? is this correct?

You can walk and participate in the graduation ceremony, but you cannot "graduate". I finished one major in May and my second major in August, with the August degree being my primary degree. I wanted to participate in the ceremony that spring for my primary major, and was allowed to. Talk to your advisor about whether that's allowed / possible within your department.
