I love omelets, I make a cheese/mushroom/green pepper/onion filling for them that is awesome.
When I'm lazy, I just make them scrambled.
Side of toast and green tea or coffee round it out

omelets are great, with onion, cheese, olive, tomato, garlic, fresh mushroom filling.
but it takes a while to make one of those.
so i usually just do either sunnyside up or soft boiled. (just with salt)
white has to be completely done (but not overdone and rubbery), but yolk MUST BE ALL LIQUID. i eat all the white, leaving the yolk, and then i put the whole yolk in my mouth gingerly careful not to break it, and then it is pure bliss... mmm, orgasmic!!!

runny white is nasty, cuz it is like stringy snot
but liquid yolk is more akin to fancy/gourmet food, like dark chocolate, truffles, smoked salmon, etc.

Whenever I get in my omelette phases, I usually keep diced ingredients in the fridge to go at a moment's notice. All the ingredients you listed are great. I like a little oregano in there too. Something else a little funky? some rosemary.
