My wife got me a some classes at this place in Durham: http://chezbaygourmet.com/ I think it was 3 classes for $100.
It was pretty fun and I learned enough to get my money's worth. It was little things like being shown exactly when pasta dough was done being kneaded (took a lot more than I had ever done before, which explains a lot of my failures at making fresh pasta in the past). The classes are about 12-14 people if I remember correctly and they are one of the few cooking classes that actually let you cook (I was surprised at how few let you do any prep/cooking, apparently liability issues). 9/4/2007 10:20:33 PM |

Oh, and "julienne" is far advanced. Some people suck so bad at cooking, I mean, are so stupid, that they aren't able to follow simple instructions like
boil the pasta simmer it for 6 minutes reserve some liquid
etc.

i dont want a cookbook. I know some of the basics but for me its more a timing issue. Me and a friend want to take it together, we thought it would be fun. Nothing too basic cuz we arn't total retards in the kitchen but nothing to fancy either or overly educational too. I already know how to make everything I need to know how to make. I don't eat for enjoyment, I eat because it's necessary. The quicker, healthier, and easier it is the better. Because of this I eat a rather bland diet, but that's fine with me. The appeal of learning how to make lobster bisque and creme broule has never appealed to me. Don't get me wrong, it'd be cool to know how to do and it's impressive to see what a good cook can do, but it doesn't seem like the kind of thing I would pay to learn. 9/6/2007 2:22:21 AM |

I've heard of that. 850 the Buzz pimps them on their commercial breaks a lot.
I would love to take a cooking class. I took that short cooking class they have at NCSU about a few years ago and really enjoyed it. I do need to start learning some more dishes because I only do a couple of dishes well.9/6/2007 10:06:22 AM |

I agree. The shitty thing about cooking classes is they typically teach you how to make certain meals, but dont really teach you the fundamentals of the technique behind them. If you learn, and really understand technique, you can pretty much make anything. Thats the difference between cooking classes, and a culinary school.

I'm with Ian (MetalRed). I need to start doing this shit for money. Get a good kitchen and teach classes 4 nights a week, 10 people per class, $30/person... gross $1200/week... that's much better than i get paid now.
