22 1/2 inch Weber grill
Grease pan
10 lb. bag charcoal
8 oz. apple, cherry or hickory chips soaked in water
Rib rack
4 slabs baby back ribs, 1 1/2 lbs., down
16 oz. Sweet Baby Ray's BBQ Sauce
Salt
Fresh ground pepper
Onion salt
Basting brush

Cooking time: 2 - 2 1/2 hours.
Put 52 coals in center of grill and burn for 30 minutes. Then put 26 coals on each side and put grease pan in middle of grill basin. Season both sides of skinned ribs generously with salt, pepper and onion salt. Stand ribs on rib rack in center of grill and cook for 30 minutes. After 30 minutes, rotate ribs, inside to outside, and from top to bottom.

Add soaked wood chips and six charcoal briquettes to each side of coals. After 30 minutes, rotate ribs again. Check ribs every 15 minutes and rotate when necessary. Ribs are cooked when you can penetrate them easily with a fork (about 2 hours). When ribs are tender, remove them from rack and place the ribs upside down in center of grill.

Generously brush Sweet Baby Ray's BBQ Sauce on ribs and place ribs side by side, 2 high, in center of grill. Cover and cook for 10 minutes. Turn ribs over, apply sauce to top of ribs and cook another 10 minutes. Then serve and enjoy!

this one worked well, but instead of reducing the braising liquid I just used a good BBQ sauce

All you really need to cook ribs in the oven is a rub and some aluminum foil. If you have a lot of spices laying around you can make your own from a recipe online, but if you don't really have anything it will be easier and cheaper to just go buy a pork rub from the store.

This part is optional, there is a membrane on the back side of the ribs, if you remove this it will help the rub penetrate better and make your ribs softer when finished. Its kind of tricky to remove if you never done it before, but basically take a knife and insert it between the bone and the membrane and push it along the bone and pull up. It helps to start at one of the ends and then once you get a hand hold just pull the membrane off, it should come off in one piece.

Coat the ribs liberally with the rub and rub it in. Then wrap the ribs in aluminum foil and you want to wrap them wit one large sheet of foil if possible so that liquid can't escape. Then refrigerate them until about 6 hours before you want to eat. Place the ribs on a pan preferably something with an edge that will hold liquid in case your foil starts leaking. Cook at about 225 for six hours. Most of the rub should have come off in the cooking process, but if there are big clumps you can break these up or scrap them off if you wish. I then usually glaze them with a bbq sauce ( I use sweet baby ray's also). If we are cooking other stuff on the grill I will usually finish the ribs on the grill.

definitely remove the membrane. it'll just make your ribs tougher, and you want that fall off the bone shit.

when removing the membrane, use a paper towel to grab it. the membrane is all fat so it gets slick - the paper towel will help you grip it. and i usually start in the middle, but to each his own.

^^ so for that recipe you dont boil em or add liquid to the tin foil packs? cuz alot of em say to do one or the other, or to put em in a pan half filled with water and cover with tin foil. and i had most definitely planned on removing the membrane, had em one time with it on and they were the toughest ribs id ever had!
