I've got two LCD readouts for thermal probes in the front of my case
is it possible to back light these?

what should I use?

Electroluminescent sheet or strategically placed ultrabright LEDs (maybe with a diffuser)

are they translucent lcds?

I'd go with the LEDs, Luxeons are pretty popular for this purpose
