i should preface this by saying that i suck at cooking. It took me an hour and a half.

I decided that it would be good to add a little orange zest to the filling even though it wasn't in the receipe. Now i have ravioli that taste like orange zest. Why do i do shit like this

yea i've done stupid things like that too.

like adding loads and loads of pepper to chili to prove my manliness to my friends, only to find myself working on the same serving of chili days later.

they had a very acidic fruity flavor from the orange. I just thought they were toooo plain the way were so i tryed to ..... improvise. FAIL/

I've tried both Dave's Insanity Sauce and Endorphin Rush

Endorphin Rush tastes like prunes mixed with habaneros.
Dave's insanity sauce is about as hot, but has a much better flavor.

Well i guess i should say that it not that i suck at cooking so much as it is that i try to cook fairly complicated stuff (at least for somone who is experienced in the kitchen)

they dont taste bad, im hoping i can tone down the citrus with some cream in the sause

actually... mabey i didn't mess them up afterall. The sause calls for 2 teaspoons lemon zest so ill just not put in the lemon zest and just add a splash of lemon juice.

This might not be to bad afterall!

there is a big difference in cooking with citric acid and using zest. not the best idea.

unless you are using an olive oil sauce, i highly suggest you avoid the lemon juice. adding it to tomato base which is already acidic will make it overly acidic. adding it to cream will curdle it.

They have this shit at Southern Season that's pure capsaicin or something. I remember it being something around $100 for a bottle of it.

So i only used like half the chicken from the ravioli...... so today I took the other half of the chicken and attempted to make chicken salad. Grapes, walnuts, chives, celery, dash of curry
...


At least i didn't fuck that up. Tastes pretty good

Sauce

ok, Zest vs juice. Zest gives the flavor of the citrus fruit without adding shitloads of acidity.
Juice adds lots of acidity and a little flavor. Both are good depending on what you're trying to do.

I can't stand fruit in chicken salad.

Best chicken salad I have ever had:
Chicken
Celery
Onions
Mayo
Salt
White Pepper
Worcestershire sauce (this makes it)

All basically to taste. It's extremely simple and fantastic.
