about 350 degreescook for about 1 hour and 20 minutesI'd recommend just getting a roasting pan to do it in. But if you don't have one, a slotted pan placed over a deeper pan will do. The idea is to catch the drippings, but still allow for heat to cook the chicken on all sideswash the chicken well before placing it in the oven. stuff it with veggies (chopped celery and carrots usually work)I would make a rub out of salt, pepper, onion powder, cayenne pepper, thyme, garlic. Then cover the chicken with that. Place it into the preheated oven.**You'll want to cook it until the juices run clear when cut around the thicker parts of the chicken. It shouldn't be pink near the bone anymore. If it starts to get too brown for your tastes, then cover it all with some aluminum foil baste it with chicken broth twice while cooking**you can find a recipe for a rub or marinade, almost anywhere on the internet[Edited on December 7, 2008 at 12:01 PM.
