I was thinking about how I have not had bison or ostrich in a long time. A friend recently told me that whole foods sells frozen bison steaks but I was hoping to find the real deal- fresh meat. Anyone know where to find these in the triangle? Farmer's market? If not in the triangle, I travel down east a lot and could pick some up if someone knows of a purveyor east of the triangle. Thanks

Last week I was at the farmer's market and I actually remember a guy across from the bucket of soda pop selling free range Bison burgers and steaks. I don't know if he's still there.

Pleasant, sells meat from his Sunset Ridge Buffalo Farm mostly through word-of-mouth and online orders. Ground burger costs $5.25 for a 1-pound package; other cuts range from $6.25 a pound for chuck steak to $23 a pound for filet mignon.

Other than wholesalers, most meat is flash frozen. The farms usually have a third party process the meat for them and flash freeze them into nice little packages ready for shipping.

Dakota Grill in Cary sells it - I think fresh, not frozen, but I'm not sure.

You could always go to Ted's and get some Bison burgers or steaks. I think the quality of their steaks is pretty good.

ugh.... I just don't get the bias against frozen meat. Seems to me that if you're worried about freshness that you'd rather have it flash frozen at the spot rather than refrigerated for the week or two it takes to get to your plate at dinner time.

(totally ignoring the whole aging process that is both mandatory and kind of moots the entire issue)

Ted's Montanna Grill is the shit. THey have fresh Bison that is amazingly good, fresh, and tender. They had a great 3 course $15 meal. I would highly recommend going...Bison Meatloaf or Bison Steak, either are great and healthy...

just purely from speaking personally:
the bison i had was very tough and "gamey" while the ostrich i had wasn't so much. It had a very neutral flavor (like beef steaks) and wasn't so tough.

I only purchase my Fresh Bison and/or Ostrich Steaks from my local friendly Food Lion. The butcher there (Larry) personally bags, tags, and hacks up each Bison and/or Ostrich so I know if it comes from Larry I'm getting quality meat at a quality price. If you are thinking about purchasing Fresh Bison and/or Ostrich Steaks, I highly recommend purchasing them from Larry down at the Food Lion.
