2 medium onions, chopped fine 1 medium green bell pepper, cored, seeded, and cut into 1/2 inch strips 6 medium garlic cloves, minced 1/4 cup chopped jalapenos 2 t paprika 3 T ground cumin 2 t ground coriander 3 t dried cayenne 3 t dried oregano 1/2 t cocoa powder 1 lbs. ground beef 1 tube country sausage 1 can dark red kidney beans, drained and rinsed 1 can black beans, drained and rinsed 1 can diced tomatoes 1 can tomato puree Salt Pepper
Heat a large stock pot over medium. Add ground beef and country sausage. Cook, breaking up chunks, until no longer pink. Drain excess oil.
Add onions, pepper, garlic, cocoa and spices and cook, stirring occasionally, until the veggies are soft and beginning to brown.
Add the beans, tomatoes, puree, and 1/2 t salt. Bring to a boil, then reduce heat to low and simmer, covered, stirring occasionally, for 1 hour.
Remove the cover and continue to simmer 1 hour longer (if the chili looks too thick, add a bit of water).
Adjust the seasonings with additional salt to taste.

You can't taste the chocolate lol. It helps bring out the flavor of the hot peppers, a well-known cooking trick.
Oh, and sometimes I add a can of beer to the chili if I have some laying around.

1 lb ground beef 1 can texas pete chili sauce ~¾ cup ketchup (not sure, i usually put enough in the pan till it looks right)
brown the beef, ground it up, stir in the texas pete chili sauce and then the ketchup...stir until it looks consistent

There are as many recipes for chili as there are people who make it.
A) cumin, chili powder, and salt B) browned meat or cooked ground meat C) browned tomato paste D) sautéed onions and garlic E) tomatoes, peppers or other vegetables F) cooked beans G) beer / liquor, other spices

combine in a large pot:
2 lbs ground beef, browned several cans of tomato sauce (3+, depends on how much you want to end up with/how thin you like it) 1 large or 2 small cans of light red kidney beans, just pour the whole thing in there 1 can crushed tomatoes
flavor with a lot of: -black pepper -chili powder -crushed red pepper or a couple chopped fresh jalapenos or some texas pete in a pinch & a little: -salt -onion powder or finely chopped onions -paprika / cayenne if you've got em
stir that shit up and cook it on low for like 90 min - 3 hours, stirring it regularly
