the farmer's market has some dope cheese

i bought some pepperjack from there, and some habanero cheese that is fantastic

catheads are usually really fluffy and greasy and big

i honestly can't pinpoint what sets it apart from, say, a bojangles biscuit. probably just size. for me, it's just one of those things where i know when i'm eating a cathead

yeah, that's because it's a batter, not a dough. they spoon it onto the pan instead of rolling it out and cutting them.

the tands bojangles back home have the cheddar bo biscuit

it's a somewhat respectable substitute to the cathead and hoop cheese

Love it.

I sometimes order whacky shit from Murrays just to explore the different types.

I always will love a nice young Manchego with a bit of Quince Apple Paste and perhaps a nice Sauterness wine to go with it.

I once had some French cheese that was buried in the earth for 2 months. Wasn't really that good.

Buffalo Mozzerella.
Parmesan Reggiano (nothing is a substitute for the real thing)
Mimolette - it looks like a cratered cantelope, but it was the favorite cheese of Charles de Gaulle.
Oh and who can forget Gorgonzola.
