One of my favorite veggie recipe is just spaghetti and tomato sauce with sauteed portabello.

simple and delicious.

yeah i saw that thread and skimmed through it. From what I saw most of it is a who's wrong who's right on the veggie front and there recipes that were there are mostly for deserts or vegan cooking, neither of which was lookin for

just wanted some plain ole easy vegetarian meals that still use eggs, milk, cheese, ect. I am not used to working with any meat substitutes like eggplant or tofu so i thought ppl on here would have some ideas

you can fry a whole bunch of different veggies including eggplant, okra, asparagus, onions. all of which are incredible fried.

Eggplant parmasean is actually really good. I had never had it before, but loved it. This is how my roomie did it:

Slice up some fresh eggplant.
Dip in some egg white.
Dip in bread crumbs
Put in a pan with some oil.
Brown both sides.
In the bread crumbs you can add spices too (garlic, basil, oregano, pepper, salt).
Remove, cover with shredded parmasean and mozzarella. (can also do this in the pan after you've flipped once).
Serve with your favorite pasta sauce.
SUPER easy, and pretty flippin' tasty.

mmm... fried pickles lol.. don't knock it until you try it.

Heck, sauteed juilenne zucchini and squash and onion is great. little pepper, lemon juice and olive oil and you're set.

You should "salt and drain" the eggplant first to remove excess water and bitterness.



Willy Nilly's Sesame Tofu

2 lbs extra firm tofu, frozen, thawed, and squeezed completely dry
2 tablespoons peanut oil
3 tablespoons honey
2 tablespoons sugar
2 tablespoons ketchup
1 tablespoon apple cider vinegar
1 teaspoon salt
1 tablespoon dark (toasted) sesame oil
2 tablespoons sesame seeds, toasted
2 green onions, sliced

Tear the tofu into ragged bite-sized chunks. Make sure to squeeze the tofu dry. Fry the tofu in the peanut oil over medium-high heat until it's lightly browned and crispy. Remove the tofu from the pan, and add the honey, sugar, ketchup, vinegar, and salt. Bring to a boil and remove the pan from the heat. Mix in the sesame oil. Add the tofu, toss to cover, and put it in a serving dish. Sprinkle with the sesame seeds and green onions. Optional: Serve with steamed broccoli.

these arent particularly healthy but they are tasty once in a while


meat-free wheatballs



can of chickpeas, drained and rinsed

1/4 cup whole wheat flour

2 tablespoons minced onion
2 tablespoons minced celery


oil



mash the chickpeas and mix in the vegetables. while stirring slowly add the flour and stir until thoroughly mixed and it becomes doughy. make into 1" balls and cook in 1/2" of hot oil (canola is the best for you) until light brown and crispy.

I am making this tonight. Boiled cabbage, potato salad (cut/boil potatoes, mayo, celery, onion, sweet salad cubes) serve warm. YES WARM!!, Deviled Eggs (you may omit this if you have a thing against eggs), biscuits.

Another thing I've grown fond of making. Flour tortilla, fill in half with black beans (drained), add salsa, add cheese, fold over and stick in the toaster oven until crispy. You may butter the tortilla if you wish. So so so yummy.

^^ That sounds yummy! I wonder if I could omit the wheat or use a wheat alternative. Something healthier.

I'd probably serve that over tofu shirataki noodles.

^ And the burrito sounds perfect. I should def eat more black beans ... they're a true wonder food!




Last night I made a delish salsa soup:

16 oz of salsa
20 oz of water
2 large onions
1 red pepper
1 green pepper
1 yellow pepper
1 lb of portabello mushrooms

Cook til veggies are tender. I didn't add tofu last night, but it's a really great addition if you want some good protein in the dish. I also recommend using spicy soy sausage.

Wheat tortilla should work. I just used flour since that's how I was introduced to it. I might do wheat next time though.

Another burrito recipe (or rather list of things to assemble I guess): take a wheat tortilla, add mashed cooked sweet potatoes, black beans, sliced avocado or some guacamole, cheese, hot sauce, salsa, sour cream and lettuce or sprouts or some kind of greens. It's SO good. I first tried it at a friend's place and I thought it was going to be odd and not so tasty because I couldn't see how sweet potatoes belonged on a burrito, but it was awesome and I am addicted to them now.

Mediterranean Sweet Potato Pizza

Makes 2 pizzas
Ingredients:

FOR THE TOPPING:
* small can chopped tomatoes
* 1 small onion, peeled and finely chopped
* 1 garlic clove, peeled and crushed
* 1 tsp freeze-dried oregano or mixed herbs
* 2 tsp virgin olive oil
* 1 small red pepper and 1 small yellow pepper, deseeded and slized
* 2 medium zucchini, trimmed and sliced
* 1 medium red onion, peeled and cut into wedges 50g pitted green or black olives fresh basil leaves, to garnish



FOR THE BASE:
* 1 lage sweet potatoe, peeled and cut into chunky pieces (about 400g prepared weight)
* 300g organic whole meal flour
* 2 tsp baking powder
* 1 good pinch herbal seasoning (optional)
* 65ml cold water mixed with 2 tbsp virgin olive oil

Method:

* Place the tomatoes, onion, garlic and mixed herbs or oregano in a saucepan.
* Bring to the boil, then reduce the heat and simmer gently for 15 minutes until the onion is softened and the sauce is thickened, stirring regularly. Cool.
* While the tomatoe sauce is cooking, boil the sweet potatoe in a large an of water for about 15 minutes until very soft.
* Drain well, return to the pan and mash with a potato masher until smooth.
* Set aside to cool.
* Preheat the oven to 200C/Gas Mark 6.
* Place 375g of the sweet potatoe in a large bowl.
* Add the flour, baking powder and seasoning.
* Stir in the water and oil mixture with a large spoon until the dough comes together it should be soft and spongy.
* Knead lightly to form into a large ball - adding a little extra flour if the mixture seems to sticky.
* Divide the dough into two equal balls and roll out onto a lightly floured board into two circles around 2cm thick.
* Lift carefully onto two lightly oiled baking sheets. Brush lightly with oil.
* Spread one of the pizzas with half of the tomatoe mixture, leaving a 2cm gap around the edge.
* Top with half the peppers, succhinis, onion and olives.
* Shake on some oregano.
* Place both pizzas in the oven, with the topped pizza above the plain base.
* Bake the topped pizza for around 25 minutes until well risen and lightly browned.
* Cook the plain base for 15 minutes until golden and cooked then remove and allow to cool.
* Serve the topped pizza hot garnished with oregano and lots of fresh, raw basil leaves, accompanied by a fresh, crunchy mixed salad.
* (Sometimes I toss over raw spinach leaves too).
* Spread the remaining tomato mixture over the plain base top with reserved vegetables and olives, cover loosely in foil and freeze on the tray.
* The next day remove from tray and wrap tightly in foil.
* To cook, remove foil, place on a lightly oiled baking tray and banke from frozen in a preheated oven at 200C/Gas 6 for 15-18 minutes until hot.

Sweet Potato Chili!
(Feeds 4-6 depending on portion size.)


2 sweet potatoes, peeled and in 2-inch chunks
1 yellow onion, diced
2 garlic cloves, minced
1 (15-ounce) can red kidney beans, drained and rinsed
1 red bell pepper, seeded and chopped
1 (14.5-ounce) can diced tomatoes
1 tablespoon chili powder
1 teaspoon smoked paprika
1 teaspoon chipotle chili powder
1/2 teaspoon kosher salt
1 cup water
1/2 cup orange juice

Use a 5-6 quart slow cooker. Peel and chunk the sweet potato and add to the pot. Add diced onion. Follow with the red bell pepper, can of tomatoes, the beans, garlic, and seasonings. Pour in OJ and water. Cover and cook on low for 6-8 hours, or until the onion is translucent and the sweet potato is fork-tender (if you want the sweet potato to get really squishy and disappear when stirred, cook longer).

I was looking for a sweet potato side dish recipe that could be done in the crock pot and stumbled upon that recipe.

It should hold up pretty well. Try "Gimme Lean" brand soy sausage: http://www.organicdirect.com/product_info.php?products_id=443

I've used it in my salsa soup and it breaks apart very well and adds really nice texture/flavor to a soup.
