two boxes of "Jiffy" corn muffin mix, 1/4 cup sour cream, two eggs, 2/3 cup milk and half a can of drained sweet-corn in a cast iron pan

bake at 400 for 30 minutes

I disagree. My grandma's cornbread never actually had pieces of corn in it outside of the cornmeal. Therefore your cornbread is no good.

Cornbread should be like German beer, three simple ingredients: Water, Cornmeal, and Lard. (well, you should add salt too, but it fucks up my simile )

I do have to agree that Jiffy corn muffin mix is delicious, but it just ain't cornbread.

Simple can be good, but mix ins like cheese, jalapenos and corn can be very tasty too. I wonder if I could get a pan that would let me make a corn bread bowl to put chili in.

box of Jiffy
1/4 cup of Egg Beaters
1/3 cup Heart Smart vegetable oil
1/2 can of reduced-sodium corn
1/4 pound 99% fat free ground turkey
2 diced jalapenos
dash cumin

grease cast iron skillet with fat free/calorie free baking spray

bake til golden brown and toothpick inserted comes out clean

Here it is (from Better Homes and Gardens cookbook):

# 1 cup all-purpose flour
# 3/4 cup cornmeal
# 2 to 3 tablespoons sugar
# 2-1/2 teaspoons baking powder
# 3/4 teaspoon salt
# 1 tablespoon butter
# 2 eggs, beaten
# 1 cup milk
# 1/4 cup cooking oil or melted butter

I added a can of white and yellow corn, cooked 5 slices of bacon on a sheet pan at 425 degrees, chopped it up and stirred it in the batter and used the remaining fat instead of the oil. Also added a teaspoon of crushed red pepper which I ground up with a mortar and pestil, and sauteed a little onion in butter and added that as well.

Yeah motherfuckers I own you.

I wanted to roast corn on the cob and cut the kernels off and use that, but there was no fresh corn to be had.

How much weight do you really think you can gain from eating a piece of cornbread?

The calorie difference between your recipe and mine, for one slice, might be 200 calories.

You wouldn't even notice.

Especially considering you obviously exercise.

If you were eating a piece a day for the rest of your life it could be considered substantial.

Not to mention we're talking about cornbread, which is already unhealthy, no matter how many fat-free ingredients you put in it.

NONSENSE.

cornbread is not necessarily unhealthy.

fat-free is not necessary healthy OR IOW fat is not necessarily unhealthy.

then up to the extra 500

then back to eating fast food and Chinese take out
