FYI...Lexington style sauce is is still a vinegar base even though there is ketchup added. generally 4 parts vinegar to 1 part ketchup. far from a tomato base. this one of my peeves.
You must be thinking of KC masterpiece or something.
My stance is still strong in that eastern nc motherfuckers are the most close minded about bbq in the country.
Also in my opinion....BBQ must contain smoke flavor, something the overwhelming majority of eastern nc bbq did not contain. ( PS i don't hate eastern style. it can be good. but most is a boiled greasy mess disguised as bbq!)6/18/2010 12:35:24 AM |

Quote : | "Barbecue ... is a method and apparatus for cooking meat and various other foods, with the heat and hot smoke of a fire, smoking wood, or hot coals of charcoal, cooking gas, or even electricity; and may include application of a marinade, spice rub, or basting sauce to the meat or vegetables. The term as a noun can refer to the meat, the cooking apparatus itself, or to a party that includes such food. The term as an adjective can refer to foods cooked by this method. The term is also used as a verb for the act of cooking food in this manner. ... Barbecue has numerous regional variations in many parts of the world. Notably, in the Southern United States, practitioners consider barbecue to include only indirect methods of cooking over hardwood smoke, with the more direct methods called grilling." |
Quote : | "Most etymologists believe that barbecue derives ultimately from the word barabicu found in the language of both the Timucua of Florida and the Taíno people of the Caribbean. The word translates as "sacred fire pit."[2] The word describes a grill for cooking meat, consisting of a wooden platform resting on sticks" |

I did not claim that Lexington sauce is a tomato base, I said ketchup is the most important ingredient. Considering a good eastern sauce has no ketchup at all, the presence of ketchup would indeed be the most important difference.
In conclusion, I reference the words of my good friend Kodiak:

As far as grills though, we have this one as well:
Unfortunately, at this point it's pretty much rusted out. So we're going to need to either rebuild it, or get a new one.

it's fun to be pedantic about regional word usage
I stand with my eastern NC BBQ brethren, and refuse to acknowledge the usage of BBQ to describe anything other than pork.
also what's up with that lexington stuff only using the shoulder? what a waste! 6/18/2010 11:28:31 AM |
