I just moved to Salt Lake City in April, so I'll offer some suggestions...
Outside of Park City is the Olympic Park & Ski Museum. It's not great, but it's free to visit.
Wasatch Brewery is in Park City. There are a number of other breweries in the area, so you could check some of them out. There was just a Beer Festival with some participating breweries listed here: http://www.cityweekly.net/utah/flex-168-utah-beer-festival.html
October 9-10 is the last weekend of Oktoberfest at Snowbird Ski Resort. They have beers, some pretty good food, and live music. Admission is free.
I like the drive from Park City through Guardsman's Pass into Big Cottonwood Canyon. I think the road should still be open. It's a pretty nice view at the top. The Silver Fork Lodge is a good place to eat in Big Cottonwood Canyon.
There are a number of hikes you can do. Just go to a website and scope one out that looks interesting to you and short/long enough. Silver Lake is a really easy one near Brighton Ski Resort. The Brighton Lakes hike is more strenuous, but near there. Those hikes are right past Guardsman's Pass too.
Timpanogos Cave is supposed to be pretty cool.
The Bingham Canyon Copper Mine is one the west side of the Salt Lake Valley. It's $5 per car. It's pretty interesting to see. It's the biggest open pit mine in the world. The pit is about 2.5 miles across at the top, and 3/4 miles deep. They have a good visitor's center.
Antelope Island is north of Salt Lake City, in the southeast of the Salt Lake. There's a herd of ~500 bison that roam the island. There is a decent visitor's center and good views of the lake.
It's always cool to drive on the Bonneville Salt Flats, but it is about a 2 hour drive west of SLC.
You could go to a Real Salt Lake MLS game if you like soccer.
You could probably find a curling class somewhere, that might be fun.
There are also a ton of harvest festivals and halloween activities going on this month. There should be a lot of info on the internets.

I was in park city last week. Should have been there, there the Viper International Convention...well over 100 vipers there.
Something that I wanted to do but couldnt, there is a trail that takes you up to one of the highest points you can drive to...takes about an hour to drive up there. One of the local ladies told me about it. I can see if my girlfriend remembers how she said to get there if your interested.

I'm just here for a couple of days. We drove around some today when we landed, drove up to Mirrior Lake and back, I've never been out west before so everything i saw was AWESOME.

I had a nice time even though it was a short trip. Went to Antelope Island and saw some bison, deer, coyotes, etc, while hiking around. The wedding we were there for was really nice--very small, only about 30 people, and then we all had a delicious dinner at Grappa in Park City afterwards in lieu of a traditional reception.
