May sound strange, but I had some ricotta and mint gnocchi with a bolognese sauce last week. It was phenomenal.

whip it up with some honey and a dab of peanut butter and spread it on apple slices. you can then bake it for a couple minutes or eat it like that

saute some garlic and red pepper flakes in olive oil
cook some linguine, broccoli, and cauliflower
mix everything together and top with ricotta and parmesan

stuff bell peppers with a mix of ricotta, fresh herbs, cooked italian sausage, italian breadcrumbs, egg, and a little s&p

i do this, but bc i think cottage cheese tastes better than ricotta in lasagna

Homemade ravioli. Or if you do end up with lasagna try pumpkin lasagna by mixing some pumpkin puree into the ricotta. Or try that mix in the ravioli.

i like making those eggplant rollup things with it

kinda like maniccoti/lasagna but different

i mean you just make strips of eggplant (you can even do it eggplant parm style, but i don't ie: w/ breading) and make a cheese mixture (plain cheese, but i like olives, etc in mine, you can also add meat) then roll it up, top w/ red sauce and melted mozz or parm cheese.

also lasagna is delicious. i like spinach lasagna myself or you can even do lasagna but use eggplant or zucchini as the noodles. stuffed shells. anything really. i like it all!

also loved the stuffed peppers idea! that sounds delicious.

I'd say compost but I doubt even bacteria wants to break that down. Anytime someone mentions ricotta as an ingredient to their lasagna, I know they done messed it up.
