i left out "appreciation" so that the thread is hater friendly...because let's face it, mayo + eggs IS kinda disgusting (but sooo delicious)

let's discuss recipes, breads, restaurants that serve it, and all things egg salad.

my go-to lazy recipe is: egg + mayo + pepper + a pinch of paprika. i prefer wheat or pumpernickel bread.

sometimes i add a drop of mustard to the mix to spice things up. other things that might get added: celery, dill pickle, sprouts.

does anyone use anything besides mayo to bind it together (or mayo + other ingredients like mustard, etc). today i was thinking mayo + a little bleu cheese dressing could be yummy.

I haven't made egg salad in forever but have been on a chicken/tuna salad kick lately and use Greek yogurt instead of mayo. I want to try that with egg salad.

Also from a NYT feature on 101 twists on salad I want to try this, sans anchovies:
It’s puttanesca-ish: Egg salad with pitted black olives, chopped tomatoes, capers, anchovies (optional), a tiny bit of garlic and some red onion; mayonnaise as needed.

^ i was going to ask about greek yogurt in egg salad. i wonder if it works well with the egg? because it seems like a much healthier option. the recipe sounds good! i'd leave out the capers though...they aren't really my thing haha.

i know it is a staple for most recipes. i have a love/hate relationship with mustard though. and too much mustard, and you've ruined the entire thing.

and i don't know about "runny"

my egg salad is NEVER runny. w or w/o mustard.

I usually go with eggs, mayo, spicy mustard, salt and pepper. And it's generally about twice as much mayo as spicy mustard. It doesn't have to be a LOT of mayo, but there should be more mayo than mustard.

I sometimes intertwine egg and chicken salad, making an unholy union between the two...Throw in some avacado and its a full blown taste orgy.

protip: put some olive oil in there and you don't use as much mayo.

I usually add minced green onions and mustard to mine. And smoked salmon if I'm feeling fancy.

I ate a curried egg salad sandwich at the art museum restaurant the other day. I'm not a huge curry fan but this was delicious.

I hate pickle or relish in any kind of salad.

Worcestershire sauce in tuna or chicken salad is great though.

God, Friday, when I went home, I really wanted an egg-salad sandwich. And I was just obsessing about it and I was like: 'Man, I'm gonna make one of those.' So, Saturday I went out and got a dozen eggs and I boiled them all and then I just spent, I don't know, probably three hours... like three and a half hours making you know, the mayonnaise and the onions and paprika and, you know, all the accoutrement. And then by the time I was done I just really didn't feel like eating it.

the rare times i make it i use eggs (duh), hellmans, dijon mustard, salt, pepper, minced garlic (just a little), & paprika. nothing more, nothing less. i'm very specific.

Omg I came in here to post about that! I had one a few weeks ago and it was SO good. It was curried egg salad with smoked salmon, apples, and pecans on it. Delicious.

I made the puttanesca one over the weekend. I thought the tomatoes in it might be weird, but it's surprisingly good. Also I used a little mayo but mostly Greek yogurt and I can't tell the difference. Def don't add salt though because the capers and olives take care of that.

1st off you've got to use Helmann's...after that use some mustard powder (or real mustard), onion (shallots if you have them on hand...milder taste), celery salt, some capers and minced garlic or garlic powder

the only bread i have left is wheat sub rolls though haha...but its pretty good on them!

eggs, DUKES MAYO, paprika, ground pepper

^^^ ooooh my god.....what is that? It looks exactly like this thing we used to serve at Greenshields when I worked there. It was called a Scottish Egg. It was a hard boiled egg wrapped in sausage then breaded and deep fried. It was the best, most delicious thing ever!!!!!

I made egg salad tonight.

5 eggs
1.5 tablespoon lowfat mayo (I use the kind made with olive oil)
1 tablespoon yellow mustard
1/4 chopped onion
10 sliced jalapeños (the kind that comes in a jar), chopped
Salt, pepper, chili powder

Boil water. Add eggs to boiling water for 10 minutes. Drain and rinse with cold water. Set aside to cool. Peel eggs, chop, and add to onion and jalapeño. Add mayo and mustard and mix well, mashing the egg. Add salt, pepper, and chili powder to taste.
