tryon harris teeter sells this wilmington chicken salad next to their dairy... it's not exact, but it's pretty close to the recipe my late great grandma and dad now uses when they boil the chicken off the bone and use whole chunks in it 2/18/2011 8:50:44 PM

i actually prefer apples. grapes are kinda weird.

^ my favorite. whole food has some great chicken salad and Roberts (Wrightsville Beach) is available at Harris Teeter.
chicken breast poached and shredded, vineager, celery, granny smith, little bit of red onion, real mayo, honey, cajun seasoning salt (treachers), and black pepper.

My favorite purchased chicken salad is from Lowes Foods. It has grapes and nuts (which I almost never put in my own) and is dressed with a poppy seed dressing. Last week I had one that had bleu cheese crumbles in it, which was surprisingly awesome considering I very rarely like bleu cheese.
I'm about to make some and can't decide if I want to try to make a knockoff poppy seed version or do something else like curried chicken salad or http://www.myrecipes.com/recipe/honey-chicken-salad-10000001194629/. Another recipe I just saw used honey mustard, which intrigues me, so I might try that.

I cooked two full chickens to salad-ify. I just made some with homemade honey mustard, Greek yogurt, celery, green onion, apple and thyme. Not sure what I will do with the rest of it.
Next poll question is do you like yours finely chopped or chunky? I prefer chicken chunked and veggies smaller, but Aaron dices the shit out of his chicken. 4/11/2013 2:39:15 PM

I like it chunky, and I can go either way on the fruits and stuff, as long as there is plenty of mayo, lol
maybe if i add enough garlic powder to it, I wouldn't notice using fat free eggless mayo

I have tried avocado before and it's OK, but I like regular better.
With this one, my full dressing was dijon and spicy brown mustard, a tiny bit of mayo, lemon juice and a bit of vinegar to make the honey mustard, then mixed that with the Greek yogurt and salt and pepper. Oh, and I threw in like a teaspoon of some garlic dressing I had made a while back because I wanted to get rid of it.
When I started subbing the yogurt I worked up to it. Now I like almost straight yogurt and no mayo. 4/11/2013 2:55:30 PM
