I've been inspired by one of Anthony Bordain's episodes and have decided to venture further into the world of "other parts".

I've certainly had more than my share of liver and sweetbreads, but that's pretty much it.

So tonight I bought some scrapple and tripe, and figured I would give that a go.

Anyone eat this stuff on the regular?

scrapple is delicious

but i also grew up eating it regularly, so that might have something to do with it. some people really dislike it.

My mom makes scrapple every sunday morning... I just.... I just can't. For years she has put it in front of me at breakfast and I just can't.

Isn't scrapple the same thing as livermush and liver pudding? Just a different name for different areas.

Also hell no on the tripe. That is the damn reticulum of a cows stomach. DISGUSTING!

scrapple is literally scraps of pig ground up (some innards) and mixed with seasoning and cornmeal

do not eat it regularly or you will die

I enjoy both of these. I cook tripe probably once a month and regularly order it when at the right restaurants. I also enjoy chicken feet, pig intestines, chicken hearts, and gizzards. Yummy

Oh yeah, forgot about tongue. The cow, sheep, and pig varieties are all tasty. Pig ear is also tasty when made well. I love stir fry made with it.

So I made the scapple with a Dijon butter sauce and it was awesome. It was definitely like a mix of liver pudding and sausage.


The tripe was ok. It didn't seem to add too much to the soup I made, other than a rather odd texture. I would definitely try again if someone with talent prepared it, though.

haha, the same as hotdogs


on a serious note, brains are fairly tasty but made of pure cholesterol and could potentially harbor infectious disease.

other offal for the most part is best enjoyed as sausage or finely minced as in dirty rice with chicken livers.

if you really want to eat some offal, look to some old british isles recipes. haggis, steak and kidney pie, and blood pudding can be made fairly edible, but they have a host of more intimidating recipes to choose from as well... http://www.bbc.co.uk/food/offal

Finally, if you watch Matt Zimmern's show instead, you'll quit wanting to eat offal. every show he's eating something made out of colon and saying "this tastes like actual feces"

You're full of shit. My Grandpa eats scrapple every morning, has for decades-he's 78. Same with my dad, he's 55; and I ate it on the regular growing up.

we have a chicken liver and foie gras pate at my restaurant. i can eat foie gras every day. cow tongue is good. duck tongue is good too.

Looked up scrapple, it is definitely not offal.


I have tried/eat regularly and love:

chicken liver
chicken hearts
chicken gizzards
chicken spleen
chicken kidney
lamb brain .... yum yum yum yum yum yum yum yum yum
lamb liver
cow udders


I have tried and didn't like:

camel liver


I see in the market regularly and want to try soon:

cow tripe
cow heart
cow liver
cow kidney
cow tongue
lamb tongue
lamb feet

^ haha I won't lie, I acquired a taste for most organ meats in Japan.

I don't think it's considered offal but pigs feet are also tasty.

I'm open to eating a lot of stuff, and I know it makes little sense considering all the other parts I'm willing to ingest, but uterus may be where I draw the line.


And speaking of wolfpackgrrr and Japan, I did eat some strange dish in Tokyo made with horse tendons. Shit took forever to chew. Would not eat again.

Well not the BOJANGLES dirty rice...clearly that's just ground beef/sausage or whatever

^^ Raw horse meat is some of the best stuff ever. Not sure about tendon though. Seems like it'd be a waste of time to eat.

Another amazingly delicious thing is fried chicken cartilage. Yum yum.

when granny would kill chickens for pastry, she'd always get any unlaid eggs out of the hens and put them in the pastry. they'd have like a thin membrane that hadn't hardened into a shell yet. i always thought that was kinda different, but tasty.

I'm an offal fan.

Not on the regular or anything, but if some place I'm dining at has an offal dish that looks good you can bet I'd order that.

I also love a good liverwurst sandwhich every once and a while

yeah i had some cow tongue in some tacos at one of those shady hispanic store/restaurants. the guatemalan dudes i cut grass with suggested it. wasn't bad.
