Has anyone been to BabyCakes? There's one in NYC and we have one at Downtown Disney in Orlando. I'm thinking of going sometime next week. Recommendations?

Their cupcakes are supposed to be awesome. Organic and vegan.

I am making cupcakes for a coworker next week - will post. She liked the vegan lime & coconut ones I made a while back so I guess it will be those.

Right now I'm into the miniature ones. That way I can make one batch and feed the whole work clan, plus leave a couple for the kid. /lazy

I have some left over peanut butter frosting in the fridge so I'm thinking... chocolate chip cupcakes with cookie dough (vanilla that taste like cookie dough, basically) and peanut butter frosting swirled

I like peanut butter on bananas, oreos, and peanut butter and jelly sandwiches.

As long as no one is allergic to peanuts I say go for it!

Maybe I'll bring in some cupcakes to my work next week. It's been forever since I made cupcakes!

I got all my ingredients for the irish car bomb cupcakes. I'll be glad when I get to the point where my kitchen is fully stocked and I don't have to buy a million things just to use a pinch and a dash or whatever.

I usually eat the bottom of the cupcake and then eat all the icing with as little cake top as possible. yum.

ok, sounds like a plan. I wanted to split up the cleaning and such. I don't have a ton of cooking supplies. Do I just let both get to room temperature before decorating or will the go on fine cold?

Depends on the type of icing but personally I'd let it get to room temp while you're preparing the cake.

I generally avoid this thread like the devil, but they were very good cupcakes.

I've made these a few times and they're always good (though I use the Smitten Kitchen recipe)

8 oz = 1 cup, though I suppose you overestimated because the chips don't really pack well

it's easiest to just buy chocolate bars (Baker's, Ghirardelli etc) for this kind of thing as they're measured in weights already

Thanks! I'll work on translating those sometime this week.

Also, the best icing ever is my mom's icing. I guess it's technically a butter cream but it's so light and airy it's like you're eating whipped cream and icing put into one. And you can flavor it just about any way you want. It's my default icing unless I'm making something like carrot cake.

1 cup water
4 tablespoons cornstarch
2 sticks butter
1 cup granulated sugar
1 teaspoon vanilla (or whatever else you want)
2 tablespoons Irish cream, melted chocolate, brandy, etc (optional)

Cook water and cornstarch until thick and smooth (NOT LUMPY. If it's lumpy you cooked it too long). Remove from heat. As cornstarch is cooling (put in freezer to speed up process, but don't let it freeze), cream butter and sugar for 10 minutes. Once cornstarch is cool, beat until consistency of whipped cream. Add cornstarch and vanilla to creamed butter and mix. Mix until light and fluffy (takes at least 10 minutes). Add Irish cream and mix.

^^ the thing I like most about it is it's not super sweet like most icing. It's the perfect sweetness to compliment most cakes.

I haven't really done fun cupcakes ... ever I don't think.

But I don't want to eat them all myself and I have nothing else to do with them until I guess work on Monday, and I don't want them to sit that long either. You'd think this would be an easy problem to solve but I am sort of at a loss.
