Good call - thanks

The only thing that worries me about doing the latte version is I'm not sure how some people would react to it.. I definitely don't want the flavor to be too strong - just a hint. We'll see how it goes.

After this, I want to make those almond joy cupcakes

Mini lavender cupcakes with lavender vanilla glaze. Not a huge fan of icing, so I glazed. They were amazing.

Thank you!

Also, my last two cupcakes have come out very dense, and coincidentally they are they only two i have made with the kitchenaid. Do you think i am over mixing them? I was using a handmixer before and never had this problem.

Yeah you're probably over mixing them. Sifting the flour helps a ton as well.

i made these banana cupcakes last night

http://www.tasteofhome.com/Recipes/Banana-Cupcakes-3

really good. the banana/lemon icing really makes them pop. however, if you follow the recipe, you end up with icing that ends up more like a glaze that won't hold any shape. i ended up adding extra powdered sugar to offset.

Tonight I'm making caramel mocha cupcakes and the pumpkin spice latte cupcakes. Need to remember to swing by Starbucks after work to get the coffee stuff.

I'm just using a basic yellow cake recipe, subbing the oil for pumpkin, and adding the spices to it like I would for something like pumpkin bread. Healthyish and pumpkin

ok so, due to the bread thread I decided to make this pumpkin bread recipe today. it is sooooooooo good.

http://allrecipes.com/recipe/pumpkin-bread-iv/detail.aspx

if you are going to make this, please keep in mind that A SINGLE BATCH MADE 3 LOAVES OF BREAD AND A DOZEN MUFFINS. I will be giving most of this away to coworkers and neighbors

i did modify this recipe a bit because 1) i didn't want to use that much oil and 2) i didn't have ground cloves so I subbed out 1 cup of the oil for unsweetened applesauce and used 3 1/4 tsp pumpkin pie spice, 1 1/4 tsp ground nutmeg and 1/2 tsp cinnamon. I also added 1 big bag of walnuts.

I had some cream cheese frosting in the pantry that was about to expire so i decided to make a glaze out of it. I added 5 tbsp skim milk and drizzled it on top. Or I will when the loaves are done cooling. They took about 15 minutes longer to bake than the hour the recipe states.

pics or gtfo

they are huge pics so ya'll will just have to click on them

[Edited on October 13, 2011 at 2:31 PM. Reason : and yea not cupcakes but muffins are close]

Cupcakes done! I was a dumbass and piled the icing on the caramel mocha cupcakes too high so my cupcake caddy squished them At least I got a pic before that happened

Caramel mocha in the front, pumpkin spice in the back.

I have not but I have ones of these castiron ones I use for making pancake balls and cornbread balls

I've never even thought to try and make cake balls in it. This is going to sound like an incredibly dumb question but can you bake cake in cast iron?

It worked out too because I had these old ass stale cinnamon sticks that I had been holding on to for no good reason Finally got rid of them!

Everyone raved about the cupcakes, especially the pumpkin. Definitely a hit. I even had the Belgian guy in our office say, "Congratulations. This was the first time I had a good cupcake."

Oh yeah, and those Starbucks instant coffee things were perfect! Just use one per recipe and it gives the perfect amount of coffee flavor without being too intense. I used the Italian roast version.

Sweet, thanks I think I'm going to go with those pirouette cookies for straws. I need to pick up some baking pumpkins.. I think I'm going to make the coffee flavor into a filling though. Undecided atm.

Did y'all know they have a cupcake competition at the fair? It looked like there were only a few applicants this year and none of the cupcakes looked all that impressive. I might try entering next year.

I think next time I have to make cupcakes I'm going to try making these spumoni cupcakes.

Pistachio icing sounds like the best thing ever.

There's a dessert making contest at my work next week. I'm debating making those spumoni cupcakes or making red velvet whoopie pies. I have a feeling more people would enjoy the red velvet.

I'm not a huge fan of pumpkin and chocolate together. Most I can do is chocolate chips in pumpkin bread and that's only on rare occasions.

Oh just a general PS, the pumpkin spice latte cupcake recipe makes a REALLY yummy pumpkin bread to bring somewhere in a pinch

I also ended up adding more nutmeg to mine than the recipe called for, tasted a lot better and did not overpower anything.
