So, all my life I thought BBQ was only vinegar basted garbage that I now know is eastern NC style. Recently I tried western BBQ at Dickeys in Cary and that shit is delicious. Since Dickeys seems to be more of a franchise, what are some mom and pop type places that specialize in western that are better? Bonus points if they do good brisket.

The big questions are, what kind of tip percentage is appropriate at these establishments, and will the plane take off?

Western bbq sucks. If you have to smother pork in bbq sauce to make it enjoyable, you are missing the point.

There used to be a place around tryon/401 that was excellent, but it's probably closed.

If you soak it in vinegar, you are doing it wrong.

If it is dry when you eat it, you are doing it wrong.

Backyard BBQ brisquet is on point, so much so that you have to spell it different than the rest of the briskets

i dont like vinegar. i dont like the smell of it. if i tried to drink some straight vinegar i'd probably barf it back up. i hate salt and vinegar chips.

but eastern NC BBQ is fucking delicious.

how can bbq be "based"? you are talking about the sauce right? What if the sauce has vinegar AND ketchup?

What if you, like me, eat your nc bbq without any sauce? What style is that?

As far as I'm concerned you can't get any good western bbq east of Burlington.

Also a good western NC sauce shouldn't be that thick. In most of the restaurants in the eastern bbq region that provide a "western" sauce its always thick like what they would use in Memphis or Texas or something.

because its not worth accurately presenting, so you throw that shit on a plate with some red sauce for lost souls wandering through the east if they dont have the discerning taste for true BBQ

i mean they can expect people to actually care about that inferior "bbq" its literally like painting red sauce lipstick on a hog, and what a sad waste of hog meat it is

Burlington also has Hursey's BBQ, which is a combination of the tomato and vinegar sauces and is actually pretty good.

yeah, putting stuff on food sucks!!! I just like turkey, thats it. Fuck lettuce, tomatoes, bread, condiments, salt, pepper, cheese, etc. If you have to put that on it you eating the WRONG turkey. Hell, I dont even remove the feathers and shit. Just meat and feathers.

i am always confused by the barbecue argument. the best "barbecue" i have ever had is from a whole pig cooked in one of those big smoker things. just pull the meat off the bone, so delicious with no sauce. is it still barbecue if there is no sauce?

also, i grew up in salisbury so i'm not sure if the places there are considered eastern or western style. but the pork never came with any sauce on it, it was always on the side, and there was vinegar and the sweeter/thicker (i guess what y'all are calling "ketchup based") sauce. although it tastes nothing like ketchup, so that is a little confusing. either way, i'm pretty sure i always put both sauces on my sandwich, along with cole slaw (usually white, although i do enjoy the red style cole slaw also!)

either way, most of the places i've been to in nc have that meat that basically looks like it was shredded, and if there is vinegar sauce on it its like a big soggy goopy mess. looks disgusting, tastes mediocre, and i always felt like there were some "mystery" parts chopped up in there.

i do love some brisket every now and then too. i think i just prefer when the meat is not shredded.
