Tuna soft taco
- Chunk of tuna Coat all sides in various chili powders. I use ancho, ground chipotle, aji amirillo, and guajillo, and a little salt and pepper but use whatever you have it will still taste good. Reserve some of the chili powder/salt/pepper mix. Sear or grill off the tuna so that it's still rare inside, blackened outside. Let rest, then slice off what you will need.
- Whip up an aioli with a small blob of mayo, lime juice, and a spoonful of the reserved powdered - stir/whisk to re-emulsify.
- Chop up jicama and cucumber into matchsticks and squeeze some lime juice over it with a touch of salt and pepper
- Warm a tortilla in a pan, spoon some aioli down the center, put down the jicama/cucumber slaw, tuna slices, squirt of lime and some chopped cilantro. Roll that shit up and eat it.
Takes me maybe 15 mins or so.
You can also make this into a burger, I add spinach and guacamole to all of the above, if you feel so inclined. You can also make a tasty drizzle with soy sauce, mirin, honey, and wasabi powder (whisk that shit up) if you have any leftover tuna  1/2/2012 1:04:32 PM

We do a pork tenderloin in red wine that's very simple. Heat pan and sear sides of pork tenderloin seasoned with black pepper. Mix 1/4 cup red wine and 1 tsp basil and add to pan. Cover and simmer med low for 35 minutes. You can then add cornstarch to make a gravy when done, but we skip that and just eat as is. 1/2/2012 1:23:08 PM

I made this tonight (doesn't photograph well, but it was pretty darn good.)

Thai Pork and Noodles
Ingredients
1 pound thin boneless pork chops, fat trimmed 8 ounces wide Thai rice noodles 1 cup fresh cilantro (leaves and stems) Finely grated zest and juice of 1 lime 2 slices peeled ginger 2 cloves garlic, smashed 3 red jalapeno peppers, seeded and roughly chopped 2 shallots, roughly chopped 3 tablespoons fish sauce 2 tablespoons packed light brown sugar 4 tablespoons peanut oil 1/4 pound green beans, split lengthwise and cut into pieces 1/2/2012 6:36:20 PM

I like to make rice noodles in creamy peanut sauce and then throw in whatever veggies/meat I have around.
1 can of coconut milk to a few spoonfuls of peanut butter plus some soy sauce and sriracha is a good base and then whatever else I can find over low heat.
By the time the pasta is done cooking the sauce will be done and then everything gets tossed together.
It also reheats well so I pre-portion it to take to lunch. 1/2/2012 9:55:19 PM

A crock pot isn't suited for every meal, and obviously around this part of the country many people make more things in crock pots than they should, but for many things a crock pot is perfect.
I mean shit you're the one who is talking about quick cook meals, I'm assuming you want to do something with your time other than cook. Same goes for people cooking with a crock pot. Could they make it better if they spent hours on it? Most likely, but who cares.
And if you really don't think anything that comes out of a crock pot tastes good then there's probably something wrong with you. 1/2/2012 10:32:11 PM

My weekly meansl are pretty quick and simple. A good cast iron skillet with most cuts of meat and just a little salt and pepper can do wonders. Sear the meat and if its a thick cut finish off in an oven.
Pork Chops Steaks Tuna (Seared or Blackened) Pork Tenderloin (Reasonably economical if you buy on sale split it into a couple meals).
Thin fish filets and chicken cuts bake pretty quick and you can just give a basic dash of spices or one of the premixed blends you find in the grocery.
Compliment with some canned or frozen veggies or whatever fruit might be in season. Also if you want to do potatoes don't get a big russet or yam, get a couple small yukons or reds etc. Cut them into portions and boil them for quick cook and you can finish off roasting them in the oven with some olive oil and some herbs and salt.
I save complicated sauced stuff and multi prep foods for the weekends. 1/2/2012 10:33:59 PM

Yeah I do that with spaghetti also, but many pastas are casseroles.
I mean there are seriously so many types of casseroles that it's basically impossible to hate them all. Sweet potato casserole is amazing (the kind with the nuts and brown sugar on top, not that trashy marsmallow stuff). 1/2/2012 11:22:20 PM

I cut them in chunks or slices....for thanksgiving I cook them in bourbon, sugar, butter, cinnamon, nutmeg, allspice
they're still in chunks and still taste like a fucking sweet potato (drunken)
other times I cut them in chunks and roast them and whatnot....NO MASHING

The vast majority of dishes consist of food "all mixed up." I would get pretty bored with a separate meat, starch, and vegetable on my plate all the time.
And I agree with AndyMac that it's impossible to dislike all casseroles. I hated "casserole" as a child, but that's just cause I was only familiar with one. It was sausage/onions/wild rice/cheese...I now think it's delicious (along with a bunch of other different casseroles). 1/2/2012 11:30:27 PM

like I made black eyed peas and collards for new years and served it with rice, but its not all mixed up. I literally take a spoon of rice and a spoon of peas and eat it that way
Does it not freak you out at buffets when you see people piling shit on their plate as if they can't go back and get ANOTHER plate and keep that shit separate....it almost makes me sick to watch
