I did a little googling on this, but didn't find as much information as I'd hoped. Has anyone tried this? And if so, what pairings worked successfully? I was hoping to get 4 of each type of chocolate, and combine 2 or 3 types per beer, with maybe a total of 3 different flavors of beer.

UW does and beer and chocolate pairing class so somebody has to know something about this

I vaguely remember somebody telling me Escazu doing a beer and chocolate pairing at their store before. Maybe try giving them a call and seeing what info they can give you: http://www.escazuchocolates.com/

Guinness goes well with chocolate (probably the same for most stouts). If you're looking for something other than just chocolate is goes great with Ben & Jerry's fudge brownie ice cream.

Stouts, Belgian Dubbels, Belgian Quads, Doppelbock, Sour Brown or Sour Cherry ales (Odell Saboteur & Odell Friek come to mind), maybe an Oatmeal or Coffee (Breakfast) Stout, those would top my list for pairing with chocolate. If you're serious about beer, I'd also try Russian Imperial Stouts.

While I love chocolate beers, I don't actually like to pair them with chocolate. I'd rather go the dark fruit or belgian candy route with hints of chocolate, coffee, toffee and caramel.

I would def. recommend Young's Double Chocolate, Great Divide's Chocolate Yeti, and Ommegang Indulgence.

I was wanting to do something fun for my boyfriend. He loves trying new beer and has a big sweet tooth so I thought this would be a neat idea. I live in the Outer Banks so chocolate options are limited to begin with (and moreso in the off season). We do have a few stores that sell specialty beer so I do have options there. Basically I want to do more than just average store bought candies with "expected" beer.

I did look online a bit but most stores won't allow individual orders (ie, 2 of this, 4 of that, etc) for specialty chocolates.

if it came down to crunch time you could do something like chocolate fondue with fruits/cookies and then just have a couple nice big/rare beers to pair with it

Chip's should have most of the beers listed in the first article minus the Goose Island.
