I would imagine that proceeds from something like that would go towards some form of charity for the homeless.

"Coffee table book" refers to a style and format of published material, not i's intended use. It's called that because books produced in that style have high quality photo paper and are usually images on some topic. The format was initiately popularized because people would put them on coffee tables--as they are meant to be display-worthy.
There are a number of incredibly moving photojournalism books done in this format. I have one that was produced with the book (and documentary) Dopefiend that follows a group of black tar heroin addicts in southern California.
