my momma used to cook em in a big ol pot of like tomato sauce of some sort and like peppers the sauce was pretty sweet tasting

the best is if you leave the pot on the stove overnight and in the morning you scoop out a big ol bowl of congealed fat and pigs feet pieces and when you put it in the microwave it comes out swimming in a flooded bowl and as you eat the pigs feet juice is sloshin everywhere

I love pigs feet. I often make them in my crockpot. And this thread just reminded me I have some in the freezer. I should take them out and make them for dinner Friday

Guess what pigs do all day? Yup, they're walking around in mud and pig shit. Why not just go right to the source and eat the pig's asshole?

Seriously, please don't tell me if people actually do this because I suspect they do. If you'll eat a chicken fart sandwich you'll probably eat any goddamn thing that's thrown up on your plate (pun intended)

I've been known to eat the intestines which is basically the same thing as eating their butt

I'm debating between one of these two recipes for Friday. Assume searing the hairs and blanching for both of them.

-1/2 cup tomato sauce
-pork feet stock (reserved)
-salt to taste
-ground black pepper to taste
-finely chopped cilantro to garnish

Bring a pot with enough water to cover pigs feet to a boil, add the cleaned pigs feet, bay leaves, peppercorns, cloves, and salt to taste when it boils strong, cover and lower heat to medium low simmer about 2 1/2 hours until very tender.

When pork feet are tender, remove from pot, and you will have a rich flavorful stock, strain the stock to remove bay leaves, cloves, peppercorns and set aside. You will use this stock to make your sauce.

In a deep-pot heat olive oil on medium high heat, when hot add garlic, onions, leeks, and carrot until translucent about 5-7 minutes. Add chopped tomato and when tomato is tender stir in tomato sauce let this cook down 3-5 minutes. Add some of the stock enough to cover all the veggies, and let boil about 5 minutes, turn heat to low.

Use a hand blender to blend the sauce until smooth. When sauce is smooth, add pigs feet, and enough stock to barely cover the feet, bring to a boil, add ground black pepper to taste and more salt if necessary, cover and allow to simmer 25- 30 minutes.

Garnish with cilantro and serve with rice or bread.

Ironically, I had a discussion about eating pigs feet tonight. Apparently they can be very tastey if cooked right with some vinegar and shit. I remain skeptical. However I had pig tail last weekend, no lie. It tasted just like a hog's ass.

I have not had pickled pigs feet. I think the vinegar taste would be too strong for me to enjoy. Closest I've gotten is some Chinese stewing recipes that call for some vinegar in addition to a bunch of other things.

I used to buy them pickled at the HoneyPic at the intersection of 127 and Section House in Hickory,
