Mr. Beethoven makes incredible grilled cheese sandwiches. I think it's the real butter they are drowned in first.

This is one of those food items where I describe it as a "it's your world" type of thing.
Just put in there what you like. You have the basics down.
Two slices of buttered bread put in a pan with cheese. Flip until done.
Given that, you can add in what you want.
Depends on what you like.
Basic shit is going to be meats:
Bacon, pepperoni, bologna, pastrami. Basically any thin sliced meats.
You can melt from there and be ok, or spice it up a bit.
Throw in some mushrooms, or tomato, or some lettuce.
Popular way is a melted BLT.
An already cooked egg added in is good too.
A bacon egg and cheese sandwich is just a grilled cheese with bacon and egg.
The trick is, to get your mind to learn what goes good together.
You want to take a basic idea....the grilled cheese, and make it your own.
Throw whatever you like in, as long as its what you like.
Like bacon, tuna, cheese, tomato?
Grilled cheese with bacon tomato and tuna.
It really is YOUR WORLD.
A favorite of mine is:
A grilled cheese with swiss, american, pepperjack with ham, bacon, avocado.
Wanna really get crazy, when you put the butter in the pan to get it done, throw down some grated cheese and melt/crisp it into the side of the bread.

1) heat up pan 2) spread a bit of mayonaise and a small amount of mustard on one side of two slices of bread 3) melt a generous amount of butter in pan 4) mop up butter with the dry side of one of the slices of bread 5) add a generous amount of cheese to bread (I usually prefer extra sharp white cheddar) 6) place the other slice of bread condiment side down on the cheese 7) when the bottom slice of bread is golden brown, take the sandwich out with a spatula 8) add more butter to the pan 9) flip the uncooked side of the sandwich down and mop up that butter 10) cook until that side is golden brown

Get some nice thick pieces of sliced bread, butter both sides. Brown the bread slightly first and then add in any sliced cheese you want, more the merrier (muenster, provolone, Cheddar, American, Monterrey jack, Colby, Brie, Havarti) And in the middle put a few slices of bacon cooked from earlier and cook till the cheeses start to ooze. If you want to do it right and not use a ton of butter, melt the butter in the microwave beforehand. Take the melted butter and spread it across one side of each piece of bread. This is a lot easier than trying to take cold butter to get the even spread. 4/15/2012 1:10:59 AM |

That's the problem.
Use some real cheese (any cheese you like... I love Red Leicester and cheddar), tomato as you already do, and also raw onion slices (thinly cut). (the flavor and aroma of onion getting cooked in melted cheese is heavenly!)
Put it in a grill, and that's the best grilled cheese you will ever eat. (sauteed mushrooms makes it even better, but I do that rarely, if ever)

i use sliced bread most of the time, but it has to be dense, hearty, and grainy (the exact opposite of gummy white bread). once in a while i use a whole wheat baguette, but you gotta grill it inside a grill for a while, and also press down on the grill to compress the baguette.

there is really only a couple variations of grilled cheese (w/ mayo or w/o, buttered up or not, and what cheese and bread choices you make)
all yall are just coming in here and posting hot sammiches you like to make that involve cheese and either grilling or pressing. Don't over think it- a grilled cheese is exactly that- a grilled cheese.
