Rice porridge with fermented cabbage


I'm 3/4 chinese and 1/4 khmer. I actually prefer thai and vietnamese foods over chinese.

^ So what's the deal with Americanized Chinese food? From what I understand it's got a lot more sugar than real Chinese food, but is there anything you can get at a generic Chinese place in America that's more or less authentic?

Anything not double fried is getting close to authentic.
Most stir fried dishes are authentic. A lot of chinese people eat various clear broth soups and basic stir fried vegetables with a little meat.
Real chinese food can be bland. Well, not really blad, they just have few ingredients.


That's baby bok choy with a little garlic.

Chicken with ginger.

It's funny how much food I post on facebook.

I dunno about "real chinese food" but I like:

sweet/sour chicken/pork
lo mein with lots of vegetables/meats
sesame chicken
egg foo young

Black beans (fermented soy beans) are used a lot.
Other things I remember from my childhood are braised pork with black beans or steamed flounder with black beans, ginger, and cilantro.

I disagree with this assessment. I haven't had Vietnamese food or really Thai food either. But the Chinese food I had in China was anything but "bland." Granted, I was over there for 6 weeks and I looked out as many places as possible to eat. I didn't get to have any "home cooking."

I loved Dan Chao Fan, Baozi and pretty much any dish that had duck in it . I unfortunately didn't really learn the names of most dishes I had. I personally look forward to going back this summer for a few weeks, and am looking forward to eating more chinese food (hopefully some of it home cooked this time too).

Like I said, I have never really had Vietnamese or Thai food, so perhaps it might be "bland" compared to those country's foods. But I wouldn't consider Chinese food bland, especially compared to many dishes that are traditional to European countries (although German food is pretty God damned om nomalicious, but I think Chinese food beats it).

After thinking about it there's a lot of stuff I haven't eaten in a long time (since going to college).
My mouth is starting to water.
I wish my mom had written down all her recipes.

For the most part anything in a chinese restaurant that wasn't fried then stir fried again with some sort of sauce is fairly authentic. The thing is there's a lot of [good] authentic chinese food that isn't on the menu in most chinese places around here.
If you go to a chinese place in some chinatown then you'll find those things. Try some braised meats or soups and that'll give you an idea of what chinese food really tastes like.

You're completely right. Bland, in the grand scheme of things, isn't the right word.
I guess that's just what came to my mind first because I grew up eating a lot of thai, vietnamese, and khmer food too (my parents lived in cambodia so they eat a lot of southeast asian dishes).

^That's good advice. I haven't eaten there but it smells like real chinese food to me lol

Which one do you want? There's nothing special about them. I don't know how to make the pickled carrot/daikon, my mom made that, but it's just vinegar, sugar, and salt at some unknown quantity.
