I got home from vacation and my zucchini plant has gone out of control

Please to share your favorite zucchini recipes so I know what to do with all this stuff.

Slice it up, soak it in a little red wine, salt and pepper it and throw it on the grill.

Also my wife got a turning slicer so she could make raw friendly pasta with our squash. She and 2 year old love it.

I keep meaning to buy one of those turning slicers. Maybe I'll break down and order one off Amazon this weekend.

I think I'll try making these tonight but add some ginger or something to it:

Ingredients
1 cup whole wheat flour
1 cup all-purpose flour
1 tablespoon baking powder
1 teaspoon cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
1 large egg

2/3 cup packed light-brown sugar
1 small zucchini, shredded (1 cup)

1. Heat oven to 375 degrees F. With nonstick cooking spray, coat just the bottoms of three mini muffin pans.
2. In large bowl, whisk together both flours, baking powder, cinnamon, baking soda, and salt.
3. In medium-size bowl, whisk egg, buttermilk, oil and sugar until blended. Stir in zucchini, carrots, raisins and walnuts. Make a well in flour mixture; pour in egg mixture. Stir until dry ingredients are just moistened.
4. Spoon rounded tablespoon batter into each cup. Sprinkle tops with sunflower seeds. Bake at 375 degrees F for 12 to 15 minutes, until toothpick comes out clean. Cool pans on rack for 5 minutes. Remove muffins; cool on rack."

stuffed zucchini- cut them in half lengthwise, hollow em out, stuff em with breadcrumbs, tomatoey rice or quinoa, cheese, or even meatball/meatloaf mix, bake 20-30 min at 350°

then there's the everpresent zucchini fritters and zucchini tempura. seriously, why look for other recipes?

i'm a fan of that shaved zucchini salad. pine nuts and sunflower sprouts and crushed tomatoes and lemon juice, yum. It's also great thinly sliced on a sandwich with avocado.

slice it, rub some olive oil on it, then sprinkle salt and pepper on it and throw it on the grill till it's just tender.

preheat oven to 350. cut into chunks, strips, or discs. toss in olive oil and freshly grated garlic. lay out on sheet with no overlap. sprinkle with salt, fresh pepper, and a fresh parmesan. bake until done. take out of oven. shred more fresh paremesan on top. profit.

My mom use to make an awesome turkey zucchini lasagna... not sure her recipe though.

pinterest has a lot of zucchini recipes.

stuff zucchini is good like GREEN JAY mentioned. also doing zucchini fries, grilled zucchini, zucchini cakes (like potato cakes), zucchini bread, zucchini lasagna.

begonias also one time cut up fresh zucchini and we used that to dip into a spinach and artichoke dip instead of crackers

you can fry it or do what I am going to do this week with mine, make lasagna out of it and use the zucchini as the noodles.

chop it up and spread it out on a pan. drizzle some olive oil over it and season it, maybe with garlic salt, and roast it. delicioussss

Ended up just grilling some zucchini last night.

Coworker gave me this recipe and it sounds pretty good.

1 small leek, greens removed
toasted sesame seeds
1 tablespoon sesame oil
1 tablespoon red miso
1/2 tablespoon soy sauce
1/2 tablespoon mirin
1/2 tablespoon sugar
1 tablespoon sake
1/4 cup dashi broth

1. Cut zucchini into large chunks. Cut leek into bite sized pieces.
2. Mix together miso, soy sauce, mirin, sugar, sake, and dashi broth.
3. Heat sesame oil in wok over medium high heat. Add zucchini and leeks. Stir fry until leeks are soft. Add miso sauce and cook until sauce has thickened into a glaze.
4. Remove from heat and garnish with sesame seeds."

zucchini bread: http://allrecipes.com/recipe/moms-zucchini-bread/

zucchini casserole:

1 can of cream of chicken (or cream of mushroom)
1/2 cup mayo
1 egg
pack of shredded sharp cheddar
3 squash
3 zucchini
bread crumbs
salt, pepper

preheat oven to 350
cur veggies into chunks 3/4 inch thick
put in a bowl, add salt/pepper, microwave until slightly softened
mix cream of chicken, mayo, egg, cheese in with veggies (save a little cheese for later)
bake for 20 minutes, stirring once or twice
remove, stir once more, top with cheese and bread crumbs
bake for 10 more minutes

i made lasagna with zucchini not too long ago.

just substitute the noodles for thin sliced zucchini.

also, zucchini cakes are delicious.
