I won this 12 pound turkey and don't know what to do with it. I love turkey sandwiches so I was thinking of cooking it, cutting it up, then freezing portions of it to use for sandwiches. How's that plan sound? Any downsides?

I'm frying my turkey I got from work at the state game next weekend

why not cut it up in pieces and freeze them...then cook sections when needed?

Yea, here's a downside:

yeah, the filet mignons frozen in my freezer suck when i thaw them out and grill them

then again, they're not cooked before freezing

If you're down with (i.e. possess the skillz) cutting up an uncooked turkey I'd do that and then freeze

Otherwise, cook and freeze. This ain't rocket surgery

Was it a fresh turkey or frozen? If it's been frozen before the meat might be pretty dry from freezing it again.

Followup question:

At what point will you throw away refrigerated leftover turkey instead of eating it? 5,6,7 days?

you should definitely make a soup out of the carcass

expect to spend all day processing this bird but you should end up with loads of meat and lots of soup to freeze
