an interesting sounding minor will help on entry level interviews to distinguish a bit from the crowd but from a knowledge base/usefulness down the road its pretty useless.

CSC + CogSci minor that took maybe 1 extra class outside of the CSC and basic course curriculum I took. Every entry level interview I did asked about the minor.

So don't go out of your way to do it but if you can do it with 1 or 2 classes it doesn't hurt.

well in the more advanced Econ. classes you need to know some of the idealized forms for supply and demand curves and also learn the Lagrangian method of constrained optimization

but the real tough stuff, like econometrics and the consequences of the failure of the efficient-market hypothesis, isn't required for a minor (then again I got my Econ. minor at IU so YMMV)

Interviewers tend to make small talk about any damn thing on your resume, even if it is completely useless. So don't look too much into it. When I was in college, I kept making the dumb mistake of listing my shitty minimum wage jobs and they always asked me about them.

Later I went the opposite extreme and started removing anything from the resume not strictly related to the job at hand, even if they were professional positions or demonstrated leaderships skills. Watching an interviewer try to connect the dots between "programming" as a Resident Assistant to software development was painful and disappointing.
