arent peanuts a legume? boiling is typically the preferred method of cooking legumes. boiled peanuts are sold roadside all over the place down here in charleston. at a few seafood restaurants they bring them out first instead of bread. i love 'em.

You guys do understand that the peanuts you normally eat are covered in oil and blasted at high temperatures.

And boiled peanuts are cooked in a brine much like how you marinate meat. They soak up whatever you boil them in.

You have to boil them when they're fresh out of the field and still full of moisture which gives you a window of about a month every year to buy them and cook them. Once they're boiled they will keep fine in the freezer. You just have to toss them back in a pot of boiling water to thaw and they're as good as new.
