I'm pretty sure the running joke of Peggy speaking poor spanish has always been a thing.

And she's always been naive and too trusting and one to fall for things like the genius test.

Like when the inmate manipulated her into bringing him "Boggle timer salt" which was actually cocaine.

Or when she tutored the prostitute and started dressing slutty without realizing it.

Most of the characters stayed the same relatively throughout the show (minus small differences in the beginning like Luanne fixing Hank's truck).

A few actual changes:

Peggy's mom changed from in the beginning (see the episode where Hank had mono and Peggy's mom chases a pig in the house) to later when she is the cold hearted mom that lives in Montana and looks completely different.

Peggy when to West Arlen High School, but at other times she grew up in Montana or was at Arlen High School.

Boomhauer's job was never mentioned specifically until the final episode where his Texas Ranger Badge is shown, but several times there are hints about his possible jobs and none are close to Ranger.

Lenore left Bill multiple times and for multiple reasons. Different episodes different reasons. Examples: It was me or the motivational poster world. She left on Christmas eve in one episode. Etc Etc
