Ok, folks...I'm assuming cooking responsibilities for the next three nights, and I'm kind of in the mood to try a couple of new things.
Keep in mind a couple of things: I ain't cooking with ketchup. I rarely never make any sauces from a packet. I only use fresh vegetables. Frozen if fresh ain't available. I'm not afraid to get a little wild with spices and such.
Other than that, we will eat damn near anything.

here are my favorite side dishes:
roasted brussel sprouts - cut brussel sprouts in half and toss with oil, balsamic vinegar, salt, and pepper; bake at 400F for ~20 minutes. this is also good topped with parmesan cheese.
sweet potato fries - cut sweet potatoes into desired french fry shape (disc, stick, waffle, etc) and toss with oil, salt, pepper, and a spice (I like fresh rosemary, but cayenne pepper or paprika work well too) and bake at 425F for ~30 minutes (flip over after 10-15 minutes). 5/7/2013 10:18:45 AM

last night I made chicken stir fry - take a cereal bowl and fill with ~2tbsp of oil add 2 cloves of fresh garlic - minced snow pea pods broccoli slaw ~1/4 onion - sliced broccoli 1/4 green pepper - diced 1 serrano pepper chopped bean sprouts if you got 1 sliced thawed chicken breast, dry rubbed with cumin (or jerk if you got it) 1-2tbsp of ginger sesame sauce (or 1tbsp of hoisin and fresh ginger to taste) 2tsp worchestirshire sauce (way less sodium than soy) 1-2 tbsp of honey or agave nectar
pre-heat pan pretty hot (~8/10) cook to until onions are soft and chicken is done but greens still crunchy

My favorite pork chop recipe
1. Thyme 2. Sage 3. Paprika 4. Salt 5. Pepper 6. Olive Oil 7. White onion 8. Pork Chops(boneless)
Preheat oven to 450 Mix thyme,sage,paprika,salt, and pepper. Set aside. Chop onion into small bits Get baking sheet and line with foil Cover pork chops all over with spice mix Get a non stick pan put it over med- med high heat and pour olive oil in hot pan. Sear pork chops until lightly brown Remove and put chops on baking sheet close together Sprinkle onion on top and around of the chops Bake for 25-30 minutes 5/7/2013 11:33:46 AM

Linda...I do have sweet potatoes. I was thinking about just baking whole. Damn, they're good any way you cook them. And my gf roasted brussels sprouts last week. So good.
Jeepxj420...chops are one of my go-to's, and I usually make a great gravy to go with them. With lots of onion and garlic, and often mushrooms. And rice.

when we haven't planned anything we just end up boiling chicken and make burritos or quesadillas.
chicken cheese lettuce black beans really anything you want to put in it

I'm marinating some chops in a Korean BBQ right now.
Here's a Caribbean Jerk Chicken recipe:
1 envelope Italian salad dressing mix 2 tablespoons of brown sugar 2 tablespoons of olive oil 2 tablespoons of soy sauce 1 teaspoon of cinnamon 1 teaspoon of thyme 1/2 teaspoon of ground red pepper(use more for more spice)
I combine all ingredients and use about 2-2 1/2 pounds of chicken
Marinade then grill
