Durham Bike co-op will teach you how. Oak City Cycles might, I'm not sure how they work, but they do have work stands for rent. http://oakcitycycling.com/ NCSU has a bike part of the DIY shop, the basic maintenance course is $15 bucks, I think. You may have to be a student. REI has regular bike maintenance courses.
There's also some dude on CL, though I'd choose any of the above over sketchy CL ads.
