I mean, it depends on what you're using the onion for:



Yellow = cooking. General purpose

White = sharper taste. Good in salsas and stuff

Vidalia = sweeter. Good for sandwiches

Red onions = bolder taste, and better in salads

I used to make beer battered onion rings using the thin sliced red onions we used for salads.

They are the superior frying onion.

I actually preferred to cook em like fried pickles - egg bath, toss in flour and then fry. Season with salt and serve with ranch.
