I doubt that's a real limitation...they can cook hogs somewhere else [cheap] and transport them to restaurant like they do at The Pit.

^^^ i didn't know either except i used to frequent that Jasmin place and always wondering why pig cookers were going all day. While they usually had unmarked vehicles there, I was saw some "The Pit" trucks a few times. This is all an assumption, but I think a pretty decent one

It was the only place I ate at on Hillsborough St besides the Mexican place. Last time I came to Raleigh to get everything together for starting back in the fall I got pissed off and went to the Big Easy. I literally went to 4-5 places in town and nothing was still there...
