I usually do Bos for early games.

^when you do a shoulder, do you start it before the lot opens? doesn't the lot only open like 5-6 hours before kickoff...is that enough time? 9/2/2015 6:52:40 PM |

Not nearly enough time. Yeah I usually cook/shred/sauce it at home and reheat at the tailgate if needed. Not optimal but I usually don't wanna drag a grill out there.
For an earlier game I'll start it the night before 9-10ish and transfer to the oven (200-250, depending)..later game I get up early and put it on, cook it at like 275 to make sure it's done in time.9/2/2015 7:40:32 PM |

^that's what i figured. i've smoked a few shoulders this summer, and was hoping i could do one for a game this season but have been trying to figure out the logistics of doing it. seems like the only way is to just smoke it before, pull it, and then go to the game. 9/2/2015 7:42:42 PM |

I start my butts some time between 11PM and 2AM the night before. Let them go for 4-5 hours on the smoker, then bring them inside to finish in the oven.
When it is time to head to Raleigh(90 min drive for me). I wrap the butt in foil, then in a towel. Stick it in a cooler with no ice, and when I get to the lot it is ready to be pulled. The center of the butt actually heats up during the ride as the heat distributes.

For pork shoulder i have found the best results wrapping in tin foil and putting in a cooler with towels for at least an hour after it comes off to let the juice redistribute. When tailgating I normally smoke to 190-195 and pull it and leave it in the cooler until just before time to eat.
For most games I put the shoulder on the egg just before I go to sleep for the night and its ready in time to leave for the game 9/5/2015 12:40:37 PM |
