Would you start an eastern style or western style restaurant, and why?

I would start a Lexington style one.

I assume by Western you mean Texas.

Western for sure. Barbeque pork needs more than vinegar and red pepper like that eastern style slop.

I consider Western NC style: Lexington and west of Lexington
Eastern Style: the dogshit they make east of Lexington

Well, you see, I think I would go with Eastern, because it tastes better, and I feel like it's important for a restaurant to have good food.

My fave is basically a combination of pit style and western NC sauce. Kyle Fletchers is probably my favorite, but I would rather avoid Gastonia at all cost.

IT'S NOT CALLED WESTERN STYLE, IT'S CALLED LEXINGTON STYLE YOU FUCK BRAIN.

of course in that other thread you imply that it doesn't have vinegar, so I'm pretty sure you're a moron. I think it's possible that your parents put ketchup on a pork chop and told you that was barbecue.

It's a simple fact that Lexington style is just an improvement on Eastern style by adding a little tomato to vinegar.

Also for all you fools that are probably not even from NC, the BBQ on the Western side of NC can be referred to as Western Style, Lexington, or Piedmont Style.

Here's a really interesting fact only a couple people on this site know. In many parts of the country people refer to their grill as their barbecue. That's northern style bbq, a grill.

^As long as they don't mask the taste of the pig fingernails with gallons of vinegar like this shit in Eastern NC, they can call it whatever they want.

In my experience, the only place that really knows how to do Eastern style is The Pit in Raleigh. Smithfields is a good representation of what it tastes like in the rest of the east, and I'd honestly rather just go hungry.

^RO's slaw is great, but their sandwiches are not good anymore. The meat is tough. Better off going to Blacks BBQ, but that's an acquired taste.

i would open a restaurant that specialized in making delicious bbq from both regions of the state! i might even offer tasty ribs and brisket if my market research suggested it would be profitable! i would serve these meats with great tasting sides and i would offer all of this at a fair, reasonable price...but at a price that still allowed me to run a profitable venture.

No big surprise it's Western style.

I remember when Barack Hussein Obama came to NC and he chose to eat Western Style BBQ. As somebody who's spent decades in the highest levels of business, my pallet also prefers this style.

I'd do whole hog, pulled, eastern style, with the skin mixed in.

At that point, I'd let people sauce it how they want, I don't have qualms with any of them: eastern, Lexington, SC mustard/vinegar, SC gold sauce, Memphis, Texas, KC, whatever. make the BBQ sauce equivalent of a "suicide" fountain soda for all I care.

My grandparents live about 20 minutes away so I've been going my entire life and it's always been my favorite of the eastern style joints. That being said, once in a while I'll have a plate that just didn't stack up to the norm but if you eat it 6-10 times a year I guess that's bound to happen
