The only thing that worries me about doing the latte version is I'm not sure how some people would react to it.. I definitely don't want the flavor to be too strong - just a hint. We'll see how it goes.

Mini lavender cupcakes with lavender vanilla glaze. Not a huge fan of icing, so I glazed. They were amazing.

really good. the banana/lemon icing really makes them pop. however, if you follow the recipe, you end up with icing that ends up more like a glaze that won't hold any shape. i ended up adding extra powdered sugar to offset.

ok so, due to the bread thread I decided to make this pumpkin bread recipe today. it is sooooooooo good.

if you are going to make this, please keep in mind that A SINGLE BATCH MADE 3 LOAVES OF BREAD AND A DOZEN MUFFINS. I will be giving most of this away to coworkers and neighbors
i did modify this recipe a bit because 1) i didn't want to use that much oil and 2) i didn't have ground cloves so I subbed out 1 cup of the oil for unsweetened applesauce and used 3 1/4 tsp pumpkin pie spice, 1 1/4 tsp ground nutmeg and 1/2 tsp cinnamon. I also added 1 big bag of walnuts.
I had some cream cheese frosting in the pantry that was about to expire so i decided to make a glaze out of it. I added 5 tbsp skim milk and drizzled it on top. Or I will when the loaves are done cooling. They took about 15 minutes longer to bake than the hour the recipe states.

Cupcakes done! I was a dumbass and piled the icing on the caramel mocha cupcakes too high so my cupcake caddy squished them At least I got a pic before that happened

I have not but I have ones of these castiron ones I use for making pancake balls and cornbread balls

It worked out too because I had these old ass stale cinnamon sticks that I had been holding on to for no good reason Finally got rid of them!
Everyone raved about the cupcakes, especially the pumpkin. Definitely a hit. I even had the Belgian guy in our office say, "Congratulations. This was the first time I had a good cupcake." 10/14/2011 1:32:58 PM |
