the buttercream recipes i've seen have all been just butter confectioners sugar and whatever flavor i put in. give me some of these other recipes to try!!

Haha I have to admit I forgot about the potluck until this morning so bought the organic vanilla cake mix at Harris Teeter and added a teaspoon of cinnamon and one diced granny smith apple to it. The mix was surprisingly good and didn't have that funky artificial taste some mixes have. I think if I use it again I would add a half cup of mayo to make it more moist. The icing is the one I posted two pages back but I only did 3/4 cup sugar and then added caramel sauce while beating to taste. I usually make my cupcakes with whole wheat flour or a mix of white and wheat. I find that if I add some applesauce or extra fruit (if I'm making a fruity cupcake) then it normally balances out. Slow your roll, dude. One of my favorite desserts (grandmas recipe for fruit salad) has mayo. You're just a prick, hence why I enjoy mocking you. Don't screw up our cupcake thread kthx.
As for whole wheat flour, yes, I have used it often in sweets. I've never noticed them being dryer but I also rarely follow a recipe to the exact measurement and just go on looks and tastes to decide whether or not it's ready to be baked.9/11/2011 2:54:42 PM |

caramel buttercream! this stand mixer makes buttercream so easy. And it's so easy to personalize with different flavors. I think it is my favorite part of making cupcakes. Only problem is this is borrowed I will eventually have to give it back

You can't taste the mayo in the final product and it doesn't really affect the crumb of the cake unlike a lot of other additives. I think that's why it's a popular choice. 9/27/2011 4:34:59 PM |

Ooooo, thanks for that. I was trying to think of a way where it wouldn't be too strong and where I didn't have to use like .. Folger's instant coffee. And I think ground espresso might be too harsh
