i made brunswick stew in the crockpot to freeze for an easy thaw meal, but we ended up having a bowl (or three). it was good

yes brown rice and wild are both good.

white rice is terrible for you. and even brown rice isn't that good compared to other grains, in terms of nutrient density. wheat, oats, barley, rye, spelt, kamut, etc have around more than double the fiber and nearly double (or more) the protein of brown rice.

have you had:

red rice
black rice
purple rice

?

try them. they taste amazing, and the pigments that give them the color are super good for you (just as dark deep colored fruits/veggies are good for you).

no i don't even know where one purchases these crazy kinds of rice

probably at like whole foods i'm guessing. i have never seen those kinds at the regular grocery store. i will have to try them.

i'm not a huge rice person to begin with. i'd rather make cous cous or something. is that good for you, lol?

you can get sticky/asian brown rice (referred to as whole grain sushi rice, or sweet brown rice).

as for the exotic rices, WF should have them, or any other decent health food store.

if you get the whole grain one, then yes, but that is quite rare. try making a barley/spelt/kamut/rye pilaf. (use one or a mix of 2 or more grains). you can use whole grains, or broken grains (but must be broken whole grains, not broken polished grains). those grains are pretty tasty, and have a nice texture. or what about quinoa? haven't you gotten into that whole quinoa craze?! personally i don't find quinoa appealing, but everybody and their dog seems to be eating it. i love millet... try that! size of quinoa, but far tastier if you ask me, and also quite nutritious.

but just make sure that the grain you buy says "whole grain" or "whole [name of grain]" on it, otherwise you would be getting the grain with the outer bran layer removed, which removes the majority of the fiber, vitamins, and minerals, and a big chunk of the protein as well. check WF for all those grains, or the Bob's Red Mill products at FL or other grocery stores.

^ thanks! i haven't gotten on the quinoa bandwagon yet. i will try it though just to see.

whatever i made tonight ended up delicious. a rice bowl of sorts haha. but the zucchini and onion (zucchini from the gardennnn) made it really yummy. and marinating the chicken before adding it. mmmm.

yea tonight i cheaped out and did italian dressing
but my favorite is gingergarlicsoy

i use a little naturally fresh ginger dressing
fresh grated/zested/whatever ginger root
splash of soy
minced garlic

mmmmmmmm. crushed red pepper also goes nicely with that. you could probably just use soy sauce and ginger root too w/o the ginger dressing.

balsamic is also my other go to. just balsamic vinegar. and maybe a little olive oil (but just a little) and whatever spices. rosemary is good. oregano is good. basil is good (i have all of these in my garden so i use them a lot). but balsamic chicken is yummy yummy yummy and good for salad (IMO).

i am doing chicken breast skewers in jerk seasoning

if i wasn't so lazy i'd get a pepper and an onion or some summer squash and marinate that and throw it on the skewer. but i'm lazy. and all i have is chicken.

so that. and. some rice?! really lacking in veggie land. i might have some frozen broccoli and cauliflower. blah. maybe i will get motivated and go to the store. a red bell pepper would be really yummy.

I just cut up a whole chicken for the first time

Stuffed pork tenderloin.

Any idea why Whole Foods would tell me pork tenderloin is "hard to find"? The only thing I can think of is that perhaps it's hard to find from a source other than Smithfield's.

how do you stuff it and what is it stuffed with?

i have always been weary of stuffed food i don't know why. stuffed food and anything other than bread in loaf form. i don't know what my problem is.

maybe they meant it is hard to find like organic free range grass fed pork tenderloin? or whatever the standard is for piggies?

Butterfly the tenderloin and pound it until it's reasonably thin and even. Lay the stuffing on top, roll up and tie the tenderloin.

The stuffing I had tonight was a mix of kalamatas and sun-dried tomatoes. Prunes are a more 'classic' stuffing (with reduced apple juice as a sauce = nom), but you can put anything you want in there.

I've had mixed luck with stuffed meats. It can be difficult to get the quantity of stuffing and overall size and shape right so that it cooks evenly.

You're missing out if you don't like bread that's not a loaf!

i think a lot of times stuffed things just gross me out because they are probably kinda hard and people fuck them up easier and then i am eating some gross ass shit trying not to gag and be polite at the same time

i will have to try stuffing some meat myself. the only thing i have really stuffed before is a turkey (lol) and um...manicotti.

It doesn't look a whole lot different than the ones on the wikipedia page (minus the sesame seeds I didn't have).

But I'm not Jewish, so what do I know about challah?
