I've had it at the one in Cary ... I assume it's not any different. Very tasty. I love olives and feta. And ciabatta. It's one of the better restaurant sandwiches that come to mind.

I happen to be anti-vegetarian. it is not natural for people to eat like that, and it offends me.

seriously, I hate the double standard... it is ok for vegetarians to tell me that I'm wrong for eating a certain thing, but then if I were to counter, suddenly I'm just trying to pick a fight.

Ignoring the troll. . .

Here's a beer brats recipe that I want to try out soon.

dry mix:
2 1/4 cups vital wheat gluten
1/2 cup nutritional yeast flakes
1/4 cup chickpea flour
2 tablespoons onion powder
1 tablespoon Spike (or your favorite salt-free seasoning)
2 teaspoons salt
1 teaspoon sage
1/2 teaspoon dry mustard
1/4 teaspoon white pepper
1/4 teaspoon savory
1/4 teaspoon rosemary
1/4 teaspoon dill
1/4 teaspoon allspice
1/4 teaspoon thyme
1/8 teaspoon freshly ground nutmeg

wet mix:
12 oz stale beer*
1 cup vegetable broth
2 tbsp canola oil


1. In a large bowl, mix together all of the dry ingredients. Whisk together the wet ingredients and using a fork, gently stir into the dry ingredients. Stir just until ingredients are mixed. If dough mixture is too dry, you can add a tablespoon of water or as needed.
2. Scoop 1/2 cup dough mixture at a time and shape into logs. Place logs on piece of aluminum foil and roll up, twisting ends. Place sausages in steamer and steam for 30 minutes. Once sausages have cooled, remove from foil and refrigerate until ready to eat. After cooling, the sausages may feel a bit dry on the outside. Don’t worry, as they will soften and firm up considerably after chilling.

I have a serious question. I like to eat Vegetarian every now and again....but every strict Vegan/Vegetarian I see always looks sickly or pale. even you, alee. your picture in the "beautiful face" thread makes you looks a little sickly.

why is it that being a Vegan/Veggie makes people lose pigment in their face and lose a bunch of weight?

^^ that sounds really good alee Spike is getting tough to find though... it used to be my popcorn seasoning of choice but i can no longer find it.

The problem is if you're buying your meat in the grocery store they pretty much win every argument...

Sadly those of us who get there meat from animals they KNOW weren't raised in an assembly line manner only look worse.


Congrats your meat only contains <1% rat droppings...

I don't consider myself sickly looking or pale. A lot of the vegetarians I know aren't either.

I am pale, but I was also pale before becoming a vegetarian. The only sickly looking ones I have known were ones who didn't take care to get the right stuff in their diets - "french fry vegetarians"

I'm pale, but I've always been so. It's in the genes. I'm not sickly. I stay active, biking ten or more miles every day. Various athletes, including at least one MMA fighter, get by on a vegan diet.

Actually it does. Not quite in the way a sun tan does, but it does make your skin have more color to it.

one of these days I'm going to have some free time to post my newfound recipe for vegan green bean casserole. It was DELICIOUS on thanksgiving. I also have a great sweet potato/apple/nut recipe I tried and now love.

Something I actually do want to make:

Creamy Fall Fettuccini with Butternut Squash and Kale

Serves 3-4

* 2 Leeks, thouroughly washed inside and out, 1/4" chopped
* 2 tbs Canola Oil
* 2 tbs All Purpose Flour
* 2 1/2 cups Plain Unsweetened Soy Milk
* 3 cloves Garlic, minced
* 2 tsp Dried sage, rubbed
* 1/2 tsp Freshly Grated Nutmeg
* 3 tbs Nutritional Yeast
* A few dashes Cayenne Pepper
* A few grinds of Black Pepper
* 1/4 tsp Sea Salt
* 1 1/2 cups Butternut Squash, peeled, 1/2" cubes
* 2 cups Kale Leaves, stems discarded, roughly chopped.
* 1/2 lb Whole Wheat Fettuccini
* 1 tsp Lemon Juice

1. First, steam the squash. Add the squash to a steamer basket over boiling water and add the squash. Cook until a knife can be easily inserted with some resistance. Remember, the squash will continue cooking a bit from the residual heat after you remove it from the steamer.
2. Bring a large pot of water to a boil. Meanwhile heat the oil in a large skillet or saucepan over medium high heat.
3. Add the leeks and cook stirring frequently until soft and just starting to brown. Add the flour and mix in rapidly, thoroughly coating the leeks until no longer white.
4. Slowly whisk in the soy milk, letting the flour dissolve in smoothly. Once all of the soy milk has been added, whisk in the sage (rubbed through your fingers), nutmeg, nutritional yeast, cayenne, pepper and salt. Bring to a boil, then reduce to medium low to simmer, stirring occasionally.
5. Add the pasta and kale to the boiling water. The pasta and kale should both be done in about ten minutes, but be sure to check them both often after the first five minutes of cook time.
6. When the pasta is done, drain and set aside. Once the sauce is thick and creamy, add the steamed squash and lemon juice to the sauce. Give a quick stir, then add the pasta and kale and mix until it is throughly coated with the sauce. I the sauce isn’t thick enough, continue cooking, stirring frequently until it is desired thickness. Serve immediately.

My boyfriend's parents keep sending us clippings of news articles they find mentioning
Hitler was a vegetarian. Yes, we're fascist, run around trying to kill everyone non-Aryan, and have mustaches.


I also think Howard Zinn's "People's History of the United States" is pretty good performance art
for their coffee table. I'm sure they've never read it, as I doubt they would keep it on their table,
being conservative Christians.

Most of my family still do not understand my decision to become vegan. My Mom thinks I can sneak a little meat into my diet every now and then, no problem. wtf?!?

My grandparents tried to get me to eat ribs during my graduation lunch. I think they see it as some sort of weight control diet that I can cheat on once in a while.

I like animals enough to not eat them. It took me a while to go vegan after becoming vegetarian, but I'm so glad that I finally did. I feel great.

It was a combination of things. I was tired of eating meat out of convenience, I was already cutting out most red meats, and I decided that I could not eat something that I was not prepared to kill myself.

I used this recipe as an appetizer to take to leftyisreal's office party this past weekend:

Chickpea Salad on vegan "buttery" crackers and then garnished with small basil leaves and a sliver of radish.

Chickpea Salad

1 15oz can Chickpeas, rinsed well
3-4 Tbs Vegenaise (vegan mayo)
2 tsp Fresh Lemon Juice
1 tsp Mustard
1 Tbs Nutritional Yeast
1/2 tsp Paprika (sweet, hot, or smoked)
1/2 tsp Salt
Fresh Craked Black Pepper

Mash all the ingredients to form a chunky spread. Refrigerate or serve immediately.



nomnomnom. We had the leftovers as sandwiches the next day and it was amazing. I'm sure that this would work with any white bean as well.

So Alee, I just looked through your photo album "Food I've Made" on facebook. I think I need an entire cookbook of your recipes. That stuff looked amazing. You should post your pictures of the chickpea stuff on crackers in this thread.

Drizzly Morning Pancakes



1 1/4 cup all-purpose flour
2 teaspoons of baking powder
1/2 teaspoon salt
1 teaspoon cinnamon (optional)
2 tablespoons canola oil + oil for the pan
1/3 cup of water
1 to 1 and 1/4 cups plain rice or soy milk
1 teaspoon of vanilla extract
2 tablespoons maple syrup (or agave nectar)

Oil a large skillet and preheat over medium-high heat about 2 minutes. Sift together the flour, bp, salt and cinnamon (if using). In a separate bowl, combine all the other ingredients. Adding wet ingredients to dry, mix until just combined. Do not over mix or the pancakes will be tough; a couple of lumps are okay. Cook the pancakes until browned on the bottom and bubbles form on the top, about 4 minutes.

It is sad that a lot of recipes posted in this thread are unhealthy, made of ultra-pulverized white flour, and tons of sugar.

Guess I shouldn't post my recipe for "Two Cups of Pure Sugar" that I eat every day for lunch then. The trick is to add maple syrup on top of the pile of sugar and then sprinkle brown sugar on top of that.

Green-wa~



1 1/4 cup quinoa
2 cup water
2 tsp olive oil
2-3 cloves garlic
4 green onions
1/2 tsp curry powder
pinch of salt
3 loosely packed cups of spinach
1/4 cup cilantro
1/4 cup plain soy yogurt
2 cups frozen peas

Rinse quinoa under cold water for 1-2 minutes. Add quinoa, water and salt to pot and bring to boil. Cover, reduce heat and simmer for 15-20 minutes until water is gone.

Slice onions. Heat oil to medium heat in a skillet. Add garlic and saute for 1-2 minutes. Mix in onions and saute another few minutes. Add curry powder and mix well. Add spinach, but do not mix. When spinach is wilted (2-3 minutes), mix well and saute another few minutes.

Take mixture off heat and add to food processor with cilantro. Blend well. Add soy yogurt and blend well again.

Steam frozen peas until tender.

Combine quinoa, peas and blended green.

How do people make the leap in logic that by not having a plate of steak they have done their part to prevent unnecessary animal death, pain and suffering? How does you not eating Bessie...ensure she gets to lead a fulfilling, healthy, humane life?
