lunch today: soy bean and corn salad - steamed up some frozen edamame and corn I had left in the freezer, drizzled a teensy bit of evvo over it, and tossed with cayenne pepper and basil. oh, and a piece of wheat bread on the side. yum

this thread has just been lacking horribly lately....

anyway- I was up uberlate last night (as always) and decided to make this:




I made two loaves actually, but the second one was a twist, and I think the braid looked nicer.

it's got olive oil, sun-dried tomatoes, and black olives in it. yum

My gf made us homefries and a custard dish from veganomicon, not bad, and we have two tomatoes growing in our garden. We shall enjoy them.

I have been on a bigger than usual dried bean/split pea/lentil kick lately. And I am so excited that winter squashes are starting to appear. Lunch today was cooked garbanzos, kidney, white and black beans with tomatoes and chopped hubbard squash in a simmer sauce (I think it has coconut milk? I don't remember. It's green and tasty) I found at Harris Teeter that looked good, all over brown rice. Dinner is going to be spaghetti squash and red peppers in a sauce I am going to attempt to make out of some leftover spinach and artichoke cream cheese stuff ... not sure how that will work out, but we shall see.

I am also in love with my crock pot. In the last week or two I've made chili, sweet potato dhal, minestrone and probably something else in there. I think next I'm going for lentil soup. Any more good ideas?

Hello friend. you should try seaweed. if very good and center of Korean diet. taste food that good for you heart.

This evening I had whole wheat and cornmeal pseudotortillas topped with pinto beans, sauteed yellow onion, fresh diced tomato, grated carrot, lime juice, and salt. In that order. Turned out wonderfully.

^ Exactly. So they are the original beans. And because they are not commercialized, they would become extinct unless a few small outfits around the world grew them in small quantities and sold them to food aficionados.

^ Thanks for posting that stuff, btw. I am definitely going to check some of it out. The vegi soup mix sounds worth a try for sure.

I'm going to try a whole wheat sweet potato pizza crust today. I hope it turns out as good as I want it to be, because I've built this thing up pretty high in my head.

I broke down and made vegan pimento cheese over the weekend. It turned out yummy! So excited to eat this stuff again.

This is what I used, but of course, this could be played with to match your idea of pimento cheese.

1 block cheddar Vegan-rella
2 heaping spoonfuls of Vegenaise
4 oz diced pimento
1/2 TB sugar

Shred the cheese and blend the rest.

Glad the barbecue went well - for your next one, I'd recommend marinating thick slices of eggplant and/or squash/zucchini and grilling those, then putting them on buns. At least as good as a burger if done right, if not better.

Another great veg. alternative is tempeh. I hadn't had it until I had the tempeh sub at mellow mushroom, which is awesome, and it's really easy to prepare. It's just fermented soybeans - Looks like a rectangular dookie, honestly, but it taste great with some soy sauce or mayo and veggies.

Another complete plant protein is another ancient 'grain' that was (and still is) also used by the Native Americans (Incas, Aztecs, and Mexicans) for ages:

If you deep fry tofu you're really off base, I'm sure you're a nice person but judging by what you've posted just on this page you SERIOUSLY need to do some reading to get a grip on your nutrition situation.

For anyone around Cary, I just went here http://tangerinecafecary.com/ and it was great. I had the lemongrass tofu and ordered it "Thai spicy" and had the guy warn me that was very spicy. He seemed worried when I put more chili sauce on it and said I should get 6-star hot next time. But the bed of spinach it was served on was actually my favorite part. And it was only $5. And it came with soup, which was also great. And if you sign up on their site you'll get an e-mail coupon every month. This month's was 10 percent off lunch, 15 off dinner. And they gave us some veggie pakoras. I'm a happy camper right now

^ Yeah, my family eats there rather often. (Or they used to, at least.) I love the pakoras and lemongrass tofu. I don't know if I'd try Thai spicy, though. Four stars has always been enough for me.

I never though I had a particularly high spiciness tolerance, but I guess I do. He did say Thai spicy is too hot for most people so if you're in doubt order low and ask for extra chili sauce. Spicy food is gooood.
