spinach greek salad (kinda)
spinach feta cheese (reduced fat) banana peppers green pepepers red/purple onion black olives (wanted kalamata but those things are expensive even from the olive bar. rude.) cucumber tomato pita bread hummus
drizzled 2tbsp mixed olive oil and balsamic.

Saute the chicken breast (cut into strips or chunks) in some olive oil, then add the spinach for the last 30 seconds or so. Put it over the pasta and make a quick herbed olive oil as a sauce. Sprinkle with parmesean and you're good to go 7/13/2011 3:40:28 PM |

thanks for the suggestions! ok right now chicken is marinating in honey + dijon mustard + thyme + onion powder + paprika + black pepper
then i'm either gonna grill OR maybe oven fry in corn flakes but i feel like that NEVER works well so will probably just grill
i ate most of my spinach for lunch and realized there isn't enough left to cook....cause you know you need like 9 cups of spinach for one cooked serving, lol. maybe a small spinach salad will be possible. i might boil some orzo right now and make a cold orzo bean/cucumber/etc pasta salad type thing. that could be good! 7/13/2011 4:34:51 PM |
